Broccoli Pasta Salad

Broccoli Pasta Salad is one of the best vegan lunch ideas. Pasta is easy to cook at work. You will surely love this healthy broccoli pasta salad recipe guaranteed to be free of meat. Broccoli is healthy and great for your body. Although, not everyone is a fan of this vegetable. However, you will surely be delighted with this tasty broccoli pasta salad recipe.

Ingredients:

A bunch of broccoli

One big onion

Five cloves of garlic

A teaspoon of Turmeric powder

A teaspoon of rosemary

A tablespoon of raisin

A half cup of parsley

A cup of grated cheese

Salt to taste

Pepper to taste

Olive oil

1 Pack of 500 grams of penne pasta

Cooking Method:

1. Cut the broccoli and cauliflower accordingly.

2. Heat a pan on moderate heat. Add olive oil and cook the broccoli. Sprinkle a good amount of salt.

3. Taste the broccoli if it is bland and add more if you want. Remove the excess oil.

4. Cook the garlic and onion as well in the same pan, then add the turmeric powder, pepper and salt to the mix.

5. Cook the pasta until it is tender. Drain the pasta.

6. Using the same pot, place back the pasta and mix the broccoli, onion, pepper and garlic mix, rosemary, pecan nuts and parsley and raisins.

7. Stir and combine well. Raise the heat so that you can make sure that the ingredients blend well with the pasta.

Serve broccoli pasta salad warm and enjoy!
