My friend Lauren, from Sew You Think You Can Cook, has been a part of #FoodieExtravaganza for a few months now and I finally got the chance to join! Foodie Extravaganza is a monthly link-up for bloggers to celebrate a specific ingredient or theme.



This month, Kaylin of Keep It Simple, Sweetie, chose peanut butter as the ingredient! I decided to make Hong Kong French Toast (西多士). Hong Kong French Toast was listed number 38 in the World’s 50 Best Foods 2011 by CNN Go. It is definitely not for those calorie counting. Two thick slices of crust-less bread are filled with peanut butter (or jam), coated in egg, and fried in butter until golden. It is then served with mounds of butter, golden syrup, or condensed milk.

I added some vegetable oil to the butter to help keep the butter from darkening too quickly. This is completely optional. You want to make sure there is at least 1/4 inch of butter in the skillet and that all sides of the french toast reach the butter to fry evenly.

I filled the sandwiches with peanut butter for Foodie Extravaganza, but you can also use jam. Apricot and Kaya (Coconut) Jam are popular.

Hong Kong French Toast (西多士)

4 sandwiches

8 tablespoons peanut butter and/or jam

8 thick slices white sandwich bread

4 eggs

1/2 cup unsalted butter

1/4 cup vegetable oil

Butter, golden syrup, or condensed milk for serving

Spread about 2 tablespoons butter on half of the slices of bread (or jam). Cover with the remaining bread slices to make a total of 4 sandwiches. Cut off the crusts.

In a wide bowl, beat the eggs until well combined.

Place butter and oil in a deep skillet over medium to medium high heat. Once the skillet is thoroughly heated and butter is melted, coat one of the sandwiches thoroughly in the beaten eggs, including the sides. Place in the heated skillet and fry on all sides until golden. Repeat with remaining sandwiches.

Serve immediately with butter, condensed milk, or golden syrup.
