January is the month of positive changes and fresh starts. I don’t necessarily prescribe to a ‘new year, new me’, but I do believe in the incredibly liberating perspective of having another chance to improve things or just do better. One way I’m doing that, like many, is making healthy changes to my eating habits …Setting up for success is key, at least it is for me, and I find trying to introduce too many new things all at once never works. Continuous small changes that are introduced consistently, and after each staged success, helps me keep on track. So to ease in and add some much needed goodness into my diet, especially after Thanksgiving and Christmas, I have changed two of my lunches a week to having a fruit/veg smoothie. This will progress to more food-based changes throughout the year.
Here is a recipe for (vegan) Mixed Berry and Kale Smoothie made with Oat Milk …
Ingredients (1 large smoothie):
1 cup oat milk*
1 cup frozen mixed berries
1 cup of chopped kale
1 small chopped banana
water
*cow’s milk can be used but if you want to keep it vegan, either almond or soy milk can be substitutedDirections:
Place the milk, berries, kale and banana in a blender and liquify until smooth.
Check the texture of the smoothie and add small amounts of water, blending again, until you get a consistency that you prefer.
Pour into a large glass, and enjoy!
