Almost every year, our plum tree produces fruit, but only every other year or so does it produce a bounty; this year we had beautiful plums, and I decided to make plum jam. We don’t spray the tree or even irrigate, so it’s remarkable that we get such blemish-free fruit. I make sure I leave some for the birds, though.

My method’s very simple: collect and wash the fruit, remove the stones, and simmer for, well, what seems like (and is, really) an entire afternoon. If you take your time cooking the plums, you won’t need to add pectin, as it will have plenty of body on its own.
