This blog post is a summary of the #GIGcooks twitter chat which took place December 3rd, 2015.
Q1: What is 1 dish that means the holidays to you? Have you made it gluten-free yet? Do you need help? Just ask!
Luckily many favorites are easy gluten-free — latkes and brisket! The jelly filled donuts without owning a fryer…tough.
@briwolin
Stuffing! There are multiple corn bread mixes that work when making it gluten-free.
@GlutenDotOrg
Chicken divan and corn bread stuffing! oh and pumpkin cheesecake brownies.. I working on gluten-free.
@shadow62310
My great grandmother’s butter cookies. I make them gluten-free every year. Better than ever!
@TastyMeditation

@TastyMeditation
Q3: How do you avoid cross-contamination when you’re at a family or friend’s who’s not gluten-free?
Preparing food prior can prevent cross-contamination. Parchment paper acts as a great barrier in communal kitchens.
@GlutenDotOrg
Set up a separate table just for them, or set the non gluten free in the kitchen and the gluten-free in the dining room.
@shadow62310
I use parchment paper for literally everything, lol.
@TastyMeditation
For the celiac teen, we keep it safe and generally bring our own stuff. His palate is still unrefined!
@CeliacTeenDad
We have a designated spot for that food. It’s own little table.
@julietlindquist
Always take the proper cautions.
@Saving4Wedding
I wrote up a whole post for @udisglutenfree about how I stay safe at my in-laws. http://goo.gl/vsekhH
@MyGFreeKitchen
Q4: Do you explain gluten sensitivity or celiac to friends & family or do you bring your own dishes & snacks?
I try to explain it but at the same time I don’t want it to be too much of a hassle, so I bring my own.
@shadow62310
Always safe if you bring your own. I think I bring a bag of @GlutinoFoods pretzels to every house I visit.
@THEgfJules
Like it or not but it always becomes a topic of conversation. Good way to spread awareness.
@TastyMeditation
We have a specific area in both the kitchen for the food, and a table for dining as well.
@KCNaturalBBQ
Both! Bring food to stay safe, explain because education is so crucial–they may learn to safely prepare next time!
@briwolin
Many times we offer to host at our house. Whole meal is #gluten-free and it’s wonderful. No worries about x-contamination.
@CeliacTeenDad
We let family know what dishes we’ll be bringing. My family tries to make a few dishes also for my son.
@julietlindquist
Both! Educating them includes explaining why I bring my own food!
@MyGFreeKitchen
Both, it depends on who we are eating with. My fam and my hubby’s fam are really good with gluten-free.
@FlippinDelish
I started making all my cookies gluten-free a few years ago. Feed all our neighborhood friends gluten-free at our dessert party.
@gfliving
Get the pre-cut sheets that fit right in your cookie sheet. A lifesaver. OK, at least a timesaver.
@gfliving
Q5:What are your gluten-free cooking and baking necessities? What’s on your Santa wish list that would make your gluten-free baking easier?
I love Glutinous chocolate covered pretzels
@TastyMeditation
Gluten-free all-purpose flour is a versatile pantry item.
@GlutenDotOrg
Baking sheets/pans, all purpose gluten-free clout, etc. wishing I had more fun baking gadgets, of any kind!
@briwolin
More parchment paper! Lol. But really having dedicated pots and pans are a must.
@TastyMeditation
I would love a kitchen aid mixer.. would make life so much easier!
@shadow62310
Asked the expert in our house this one. She says more parchment pop up sheets are always on the wish list!
@CeliacTeenDad
A food scale is so important when baking! Love this one: http://owl.li/VssLE
@THEgfJules
Some new baking sheets and carries for my baked goods.
@julietlindquist
Necessities… Cookies?
@FlippinDelish
My sister and I have begun planning our entries–she’s a incredible gluten-free baker!
@briwolin
Baking Sheets & Pans
@Saving4Wedding
A @KitchenAidUSA stand mixer.
@KCNaturalBBQ
Q6: Have you checked your holiday condiments and spices for gluten?
Always! That stupid stuff likes to hide EVERYWHERE!
@briwolin
No, I’ll have to check them out. Thanks.
@julietlindquist
I have not.
@Saving4Wedding
Look for the Certified Gluten Free logo, and check our online list: http://goo.gl/o6aptp
@GlutenDotOrg
Always. I bring my own spices when I travel for the holidays too.
@TastyMeditation
No, I haven’t but I need to get on board with that. thanks for the reminder.
@shadow62310
I’ve been checking everything every time I pull it out. Not only Santa checks things twice.
@FlippinDelish
Good News! @GFLiving reports spices typically gluten-free or used in such small amounts that are safe http://owl.li/Vstk7
@THEgfJules
Checking, double checking & then more checking. Gluten is hiding all over the place. Gotta be vigilant.
@KCNaturalBBQ
Q7: What is the best tip you can offer someone who is new to cooking or baking gluten-free?
Be prepared to get messy, a bit angry, and throw some dough on occasion.
@briwolin
Have fun and try new recipes.
@Saving4Wedding
I love to take classes, they’re fun and you learn alot.
@julietlindquist
Ask someone for help first. Also, don’t sub out everything. Trust me hahah.
@CeliacBeast
Find a few gluten-free recipe bloggers and follow them for daily inspiration!
@Earth_Balance
Take it one step at a time! you won’t get it right, right away. try not to stress about it!
@shadow62310
Don’t panic. Find a good cup-for-cup substitute, then start experimenting.
@CharmCityEdible
Start right away using a good quality all-purpose flour blend like @THEgfJules flour for best results.
@MyGFreeKitchen
Don’t panic. It gets easier with practice.
@TastyMeditation
Make the best of your yummy gluten-free mistakes! http://owl.li/VstGN
@THEgfJules
Don’t give up! Keep experimenting with different flours, brands, and methods. You will find your way through trial and error!
@GlutenDotOrg
love reading blogs!
@julietlindquist
Start simple. Don’t make the most time consuming recipe your first time. Also, be safe by using dedicated gluten-free.
@glutenfreefrenz
The key to any baking IMO is following directions EXACTLY & having a great gluten-free flour.
@mom_of_gffoodie
Keep it fairly simple. Drop cookies, bar cookies and things like Birds Bests and bark that are usually naturally gluten-free.
@gfliving
If you have a disaster, you can always try to repurpose it. 1 year cookies didn’t turn out = best Christmas bark EVER.
@MIGlutenFreeGal
Read every label, and find a gluten-free buddy to bug and ask all your questions. It is easier if you have a friend!
@FlippinDelish
Be patient & kind to yourself because it is a process, & you will have some flops & challenges. Mindset is key.
@KCNaturalBBQ

@Earth_Balance
Does it have to be cookies? Because CAKE. http://www.charmcityedibles.com/2015/11/20/persimmon-polenta-cake-with-rosemary-and-lemon/
@CharmCityEdible
Q8: What is your favorite gluten free cookie recipe that fools non-GF family & friends?
Snicker doodles omg they are just too good!
@shadow62310
Can I admit to using the Pillsbury gluten-free chocolate chip cookie dough? So. Dang. Easy.
@briwolin
Our Raspberry-Filled Sugar Cookies https://goo.gl/qCztqT
@GlutenDotOrg
All of them! I am a cookie master. My gingerbread guys are always a hit.
@TastyMeditation
A good pumpkin chocolate chip cookie. It’s so yummy.
@julietlindquist
Cam and I can take out a pan of my wife’s homemade chocolate chip cookies in 3.5 minutes if we wanted to.
@CeliacTeenDad
We make an awesome cookie rolled in confectioner sugar & with a hidden Hershey Kiss inside. Always a hit!
@mom_of_gffoodie
Not my recipe, but these cinnamon stars are my fave!
http://www.foodnetwork.com/recipes/food-network-kitchens/cinnamon-stars-zimtsterne-germany-recipe.html
@MIGlutenFreeGal
My gluten-free sugar cookies fool everyone!
@FlippinDelish
Q9: What is the most surprising product or dish you have seen gluten hidden in?
Envelope glue. But food wise, deli meats (never from the slicer, ore packaged!) never ceases to amaze.
@briwolin
Just to be clear, envelope glue in N.America no longer contains gluten (clapping!).
@THEgfJules
Cross contamination in popcorn.
@TastyMeditation
nothing too surprising
@shadow62310
Tortilla chips. They’re made from corn, people! Quit messing them people! #oatflour
@MIGlutenFreeGal
I guess oats aren’t really surprising so much as horribly disappointing.
@CharmCityEdible
I think @CeliacBeast bacon adventure is the oddest hidden gluten. Who adds bread to their bacon? Really?
@FlippinDelish
Oh, but the worst: IHOP puts pancake mix in their omelets to make them fluffier. Srsly bad.
@CharmCityEdible
ALWAYS ask at buffets about the eggs – lots of places add #gluten pancake batter to keep eggs fluffier
@THEgfJules
Most disappointing: @LoveGhirardelli changed their manufacturing, now their cocoa powder may contain wheat.
@MyGFreeKitchen
We’ve experienced all types of weird additives to egg dishes. As always we have to ask ALL of the questions & more.
