Ingedients :
1 liter water, boiling
200 g yellow split peas
1 carrot
1 onion
1 clove(s) of garlic
6 tablespoons olive oil
pepper
salt
1 pinch sugar
2 bay leaves
1 vegetable bouillon cube (with 1000g water)
1 sprig rosemary
lemon zest, of 1 lemon
lemon juice, of 1 lemon
The recipe :
1.Put the split peas in a bowl with boiling water over it and stir with a spoon until the water turns brown. Then drain and transfer to a separate bowl.
2.Chop onion, carrot and garlic into small slices and place them in a pot. Add 2 tablespoons of olive, salt, pepper, sugar and bay leaves.
3.Saute the vegetables for 2-3 minutes till they are soft .
4.Add the split peas, the rosemary and boil for 15 minutes until the water evaporates.
5.When ready, remove from heat and transfer everything to a food processor (remember to remove the bay leaves). Add lemon zest, lemon juice and the 4 tablespoons of olive oil
6.Add the vegetable cube (with the water little by little)
6.Start beating them till the mixture is pureed and smooth. (check how smooth you want it to be and change the mixture by adding the water with the vegetable cube above)
7.Serve with roasted tomatoes and onions and drizzie with extra virgin olive oil, some thyme and fresh pepper
