A bona fide health haven, the 15,000-square-foot facility includes 12 treatment rooms, two outdoor treatment spaces, steam rooms, saunas, a Himalayan salt room and peaceful relaxation lounges. Dining
The culinary program at the Allison is simply stellar, led by chef Jack Strong, who is an Oregon native and a member of the Confederated Tribes of Siletz Indians. His delectable dishes honor his Pacific Northwest upbringing and his Indigenous heritage, with a focus on local, seasonal ingredients — some plucked from the 1.5-acre onsite chef’s garden —presented in inventive ways.
Signature restaurant Jory, which has also snagged four stars from Forbes, serves up standouts like steamer clams with housemade chorizo and focaccia; sesame-crusted Oregon albacore with buckwheat soba noodles and pickle shiitake; and grilled wagyu striploin with purple Peruvian potatoes, corn purée and foraged mushrooms. The highlight of the dessert menu is the Celebration of Bees honey tasting, featuring sweet stuff procured from the Allison’s 10 bee colonies. Of course, meals here are accompanied by an expansive wine list curated by wine director Elaine Heide. Strong and his team regularly host Indigenous First Foods dinners, with even more Native-focused culinary offerings expected for 2025.
