Chef Daniel Teodoro from Pizzico Ristorante showed us how to make Scallops and Parsnips Little Rhody in the kitchen Monday.

Ingredients:

4 Locally Harvested Sea Scallops

2 Medium Parsnips

1 Tbsp. Butter

2 Tbsp. Olive Oil

Salt & Pepper

Fresh Herbs: 1 oz. Rosemary, Sage, Thyme

1/2 cup Heavy Cream

1/2 lb. Rainbow Swiss Chard

1 oz. Pancetta

1 tsp. Truffle Oil

Steps:

Bring a nonstick pan to medium heat. Sear scallops on both sides, finish with 1 teaspoon of butter, 1 tablespoon of olive oil, and a pinch of salt and pepper.

In sauté pan, render down pancetta on low to medium heat 3-5 minutes. Add 2 cups of washed rainbow Swiss chard and cook until tender.

In another sauté pan, combine 1 teaspoon butter, 1tablespoon olive oil, 2 roughly chopped parsnips and sauté 3-5 minutes on medium-high heat. Once parsnips are golden brown, add 1/2 cup heavy cream & reduce. Finish with salt, pepper & fresh herbs.

To plate, place creamed parsnips on the center of the plate with the rainbow Swiss chard.

Finished with scallops & truffle oil.
