Flavor! Napa Valley kick offs this month in Napa Valley and Wine Oh TV fans get discount tickets to the annual celebration of food, wine and fun! The 2014 festivities kick off with an A list line up with two new events this year “Fried & True” and “Grapes & Grills”.

Flavor! Napa Valley™ The five-day Flavor! Napa Valley® Celebration of Food, Wine & Fun is an annual event featuring world-class Napa Valley wines alongside Napa Valley’s master chefs and graduates of The Culinary Institute of America, with wine experts like Master Sommeliers Tim Gaiser. Net proceeds from the event support programs and scholarships at The Culinary Institute of America’s Greystone Campus in St. Helena.

Held from November 19-23, festivities will include events ranging from intimate, hands-on workshops as part of a series entitled Terroir to Table: Farm, Cellar, & Kitchen Experiences; to dinners with chefs and vintners at wineries; to cooking demonstrations and wine tastings at the historic CIA Greystone campus in St. Helena. The Lineup

Renowned chefs joining the festival for the first time include bestselling author of The Pound A Day Diet Rocco DiSpirito (CIA ’86), Dean Fearing (CIA ‘78) of Fearing’s Restaurant in Dallas, Duff Goldman (CIA ’98) of Charm City Cakes, Melissa Perello (CIA ’96) of Frances in San Francisco, and author Lee Brian Schrager (CIA ’79). Celebrated returning chefs include Michael Chiarello (CIA ’82) of Bottega Napa Valley and Coqueta in San Francisco, Todd English (CIA ’82) of Todd English Enterprises, Larry Forgione (CIA ’74) of The CIA’s Conservatory Restaurant at Greystone, Christopher Kostow of The Restaurant at Meadowood Napa Valley, Masaharu Morimoto of Morimoto Napa, and Charlie Palmer (CIA ’79) of the eponymous restaurant group and the CIA’s Chairman of the Board.

Luminaries of the culinary world will celebrate Napa Valley’s magnificent bounty with an exquisite five-course menu curated by the CIA’s Chairman of the Board, Chef Charlie Palmer (CIA ’79), widely recognized as the pioneer of progressive American cuisine. Palmer’s expertly chosen team of celebrated CIA alums, all epicurean powerhouses in their own right, will each prepare one signature course to be paired with an outstanding Napa Valley vintage. This blend of talents, tastes and toasts will be the perfect start to an exceptional weekend. Cost: $295

The Appellation Trail

This epicurean adventure showcases a collection of Napa Valley’s most celebrated and innovative vintners and chefs. The evening will feature nearly 100 wineries (representing the region’s 16 iconic sub-appellations) and fare from 25 of the Napa Valley’s superlative restaurants, all presented in the CIA’s historic Greystone building. Guests will meet the talents behind the labels as an unparalleled sampling of winemakers will personally pour favorite vintages and reveal how the soils, microclimates and topography influence each wine. Dinners with Napa Valley Winemakers

The dinner parties of all dinner parties, these one-of-a-kind winemaker dinners will offer lovers of great food and wine the chance to dine with vintners in their wineries. Each winery will host a small group of guests, sipping selections from host vintners’ personal cellars while enjoying a meal prepared to complement the wines. Cost: $250

First Taste Napa: Pairing Food, Wine & Music First Taste Napa is the festival’s kickoff celebration, to be held at the new City Winery in downtown Napa, where four courses of food and wine will be paired with each chef’s musical inspiration. In addition to City Winery, participating restaurants include downtown Napa’s Angèle Restaurant and Bar, Kitchen Door, and Oenotri. Music will be provided in partnership with Festival del Sole. Terroir to Table: A Sustainable Brunch

Celebrate the abundance of sustainable agriculture in Napa Valley with a feast presented by Chef Trevor Kunk (CIA ’03) of PRESS and four esteemed Napa Green-certified winemakers. Guests will meet several of Napa Valley’s artisan purveyors and growers, and then sample some of the region’s most exquisite wines. Cost: $85

Fried & True

The American dinner staple chicken will be prepared in ways rarely seen before. CIA alumnus and author of the new cookbook Fried & True: More Than 50 Recipes for America’s Best Fried Chicken and Sides (Clarkson Potter, May 2014), Lee Brian Schrager (CIA ’79) will host a talented group of Napa Valley chefs showcasing their poultry-prowess in a traditional picnic-style setting. The inventive takes on this American comfort food classic will be accented by Napa Valley wines. Cost: $125

A New Napa Cuisine

Join Chef Christopher Kostow of The Restaurant at Meadowood Napa Valley for an inside look at his much-anticipated cookbook, A New Napa Cuisine. A Michelin-starred chef before the age of 30, Kostow attributes his culinary philosophy in part to Napa Valley’s vibrant terroir. With Meadowood’s lush gardens and the region’s myriad of artisanal purveyors, Kostow’s cuisine harbors a deep connection to Napa Valley’s bounty. During this demonstration, Kostow will pay homage to his surroundings by preparing a seasonal recipe from his debut book. Cost: $95

The Boys are Back (Michael Chiarello and Todd English)

The 1980’s were a pivotal time for both cuisine and up and coming celebrity chefs. The year 1982, in particular, brought forth two superstars out of the CIA: Michael Chiarello (CIA ’82) and Todd English (CIA ’82). These two former college roommates and culinary luminaries will reunite to share stories of their days at school, what it was like for them to forge careers as chefs and restaurateurs during this time, and how the job of chef has changed since their graduation, all while each prepares the dish that they say launched their careers. Interactive Lunch

Bestselling author of The Pound A Day Diet and celebrated chef Rocco DiSpirito (CIA ’86) will demonstrate the lighter side of Italian fare in a healthy and exhilarating interactive lunch experience. DiSpirito will demonstrate a three-course meal, and then assist guests in recreating one of his innovative recipes. Guests will then savor a sit-down lunch accompanied by sips of Napa Valley wine. The Wine Tastings

Flavor! Napa Valley’s finely curated selection of wine tastings get wine enthusiasts up-close and personal with the area’s top vintners and wine experts. Guests will taste the best of classic Napa Valley Cabernets, as well as other varieties at a number of events such as:

The Sparkling Side of Napa Valley

World class sparkling wines have been produced in Napa Valley since the 1960’s, and graced the tables of U.S Presidents ever since. Guests will join Master Sommelier Peter Granoff and winemakers from famed Napa Valley sparkling houses Domaine Chandon,

Mumm Napa and Schramsberg for a unique opportunity to discuss how sparkling wine came to Napa Valley and taste the various styles of sparkling wine produced in the region. Cost: $95

Top Taster™ Blind Wine Tasting Competition

Celebrated sommeliers from across the country will lead blind tasters in trying to identify six world-class Napa Valley wines in the Estate Cave at The Meritage Resort and Spa in Napa. Lead by Master Sommelier Andrea Robinson, this thrilling annual event is designed for both amateurs and professionals — and everyone will leave a winner. Prizes include Delta round-trip tickets, bottles of fine Napa Valley wines and glassware from The One™ by Andrea Robinson. Cost: $95

The Workshops The popular Terroir to Table: Farm, Cellar & Kitchen program includes 12 intimate, hands-on workshops in local Napa Valley vineyards, farms, wineries and kitchens. Food and wine aficionados and novices alike will learn about topics ranging from pairing sushi and sake, to throwing the perfect Napa Valley-style dinner party, to pickling and preserving. All Terroir to Table events cost $100 per person, and the group sizes are kept small to maximize participant interaction.

Model Bakery The Model Bakery is Napa Valley’s hometown bakery. Proprietors Karen Mitchell and Sarah Mitchell Hansen will lead a behind-the-scenes tour of the valley’s beloved bakery and share its many secrets – including how to make the “World’s Best English Muffins,” as described by Chef Michael Chiarello (CIA ’82). As a bonus, participants will receive an autographed copy of The Model Bakery Cookbook, one of the hottest cookbooks of the year.
