Gingerbread White Fudge Thumbprint Cookies |  Thank you Pillsbury for helping me come up with these delicious and simple to make cookies just in time for Christmas!



Last week I had the coolest experience of my entire professional career!  I got to go to the Pillsbury Test Kitchens in Minneapolis, Minnesota at the General Mills Headquarters.  {Let me just pause for a second and say that there are about 7 million things that I could write about this experience, it was that amazing, but I’m going to do my best to keep this shorter than a novel.}

I was invited with 15 of just about the sweetest bloggers you will ever meet to tour the Pillsbury Test Kitchens, get some insight on food styling and food photography, and play in the test kitchen (yup, play in Pillsbury’s kitchens!!!).  It was like a food bloggers dream come true.

As I’m sitting here writing this, I’m trying to figure out what was the highlight of my trip, what I most want to gush about.  The relaxing vibe of the test kitchens?  Where they had amazing cooks at our beck and call letting us just create while Christmas music played in the background?  It was the most relaxed I’ve been in months!

Was it learning all about photography and food styling from professionals?  I had to remind myself, many many many times that they are trained professionals with years and years of experience.  They just made it all look so easy . . . and beautiful . . . and delicious.

Or maybe the highlight for me was the prop room at General Mills.  I think that the photographers (pictured on the left above) were laughing at us the whole time, because we just couldn’t stop oohing and ahhing over all the amazing choices of napkins, plates, backdrops, candies, and platters.

The whole weekend was really more than I could have ever asked for.  Such an amazing time with such amazing people.  The people at Pillsbury and General Mills, particularly Jess, the amazing woman behind their social media, could not have been a kinder or more gracious hostess.  They taught us SO MUCH.  And the other bloggers who were there were just incredible to spend time with, learn from, and exchange stories with.

But shall we get to what you came here for?  The cookies?  These Gingerbread White Fudge Thumbprint Cookies are what I made at the Pillsbury kitchens.  Actually they are a tweaked version of what I made there because one of the amazing cooks I worked with gave me the great suggestion to mix nutmeg into the sugar.  Genius.

I use Pillsbury products a lot to bake with.  I am definitely not a make everything from scratch kind of baker.  I’m a fly by the seat of my pants, use what I have, take short cuts where possible, and enjoy the results kind of baker.  And I have found, time and time again that Pillsbury baking products, like the Gingerbread Dough used in this recipe, are perfect for that.

Gingerbread White Fudge Thumbprint Cookies

(This recipe made 40 cookies for me, so you may want to cut it in half)

1/2 cup granulated sugar

1 tsp nutmeg, plus more for sprinkling

1 lb Pillsbury Gingerbread Cookie Dough

1/2 cup flour

1 1/2 cups white chocolate chips

1/2 a can of 14 oz can sweetened condensed milk

1/2  tsp vanilla

Preheat your oven to 350 degrees.  Mix together the sugar and the nutmeg and set aside.

Mix together the gingerbread dough and the flour until completely combined.  Form into one inch round balls and roll in the sugar-nutmeg mixture.

Set about two inches apart on a parchment on silicon mat lined baking sheet.  Push your thumb down into the center of each cookie.  Bake about 12 to 14 minutes, until the edges of the cookies begin to firm up.  Keep in mind that all ovens are different, keep an eye on your cookies.

While the cookies are baking, melt together the white chocolate and sweetened condensed milk, stirring consistently until well combined.  Stir in the vanilla until well combined.  Remove from the heat.

After removing the cookies from the oven, you may need to press down the thumbprint again (the cookies will be hot, so you may need to use the back of a spoon).  Spoon a small amount of the fudge in each cookie.  While it is still hot, sprinkle the nutmeg over the cookie.  Note:   If you choose to make the full batch, wait until the last tray of cookies is baking to make the fudge.
