We love seafood, even Baby N. We can’t turn down a delicious fish, crab or shellfish dish, but our absolute favorite is shrimp. We are a family of meat eaters and I really love that I can vary our diets, and our menu, with seafood while still appealing to my husband’s “if it doesn’t have meat, it’s not a meal” theory. I recently discovered SeaPak Shrimp & Seafood Co. I love the variety they offer and the ease of working seafood into our meals. I had to try their shrimp scampi and came up with this Shrimp Scampi and Asparagus Parmesan Pasta dish that my whole family devoured. And it was so simple to make, which fit into our busy weeknight schedule nicely. We cooked it together, ate together and it was pretty quick, not to mention delicious and flavorful! What more can a busy mom ask for?!

SHRIMP SCAMPI AND ASPARAGUS PARMESAN PASTA

Shrimp Scampi and Asparagus Parmesan Pasta

A delicious seafood meal the whole family will love. Take dinner to the coast tonight!

Ingredients

12 oz package of SeaPak Shrimp Scampi

12 oz tricolor rotini pasta

12-15 asparagus stalks, cut into 1-inch pieces

4 mushrooms, sliced

12 oz jar alfredo sauce

½ cup shredded Parmesan cheese

4 Tbsp lemon juice

3 stalks green onions, sliced for garnish

Instructions

In a pot, boil water for the pasta. Cook the pasta as directed on the box.

Cook the shrimp scampi according to the package directions - I used the saute method on the stove.

Once the shrimp scampi sauce is in liquid form, add the veggies.

Saute the sliced asparagus and sliced mushrooms with the shrimp for 10-15 minutes or until tender.

Add the alfredo sauce, parmesan cheese and lemon juice and let the sauce simmer on low heat for 5-7 minutes.

You can add the pasta to the sauce and mix until the sauce evenly coats the pasta or serve the sauce over the pasta.
