St. Patrick’s Day is right around the corner! Where will you be on March 17th? I, for one, would love to be dining at Raglan Road Irish Pub and Restaurant and enjoying Downtown Disney® festivities that day. Downtown Disney® has a lot of “green” fun planned for St. Patty’s Day including performances by Irish bands and dancers. Though not all of us can be lucky enough to make it down to WDW to join in the fun, we can all cook up some Irish treats from home!
One of the well-known signature Irish items is a Fish & Chips platter. Continue reading below to find a copy-cat recipe for the Fish & Chips meal served at Raglan Road! Recipe provided by wdwrecipes.com.
Fish & Chips (Raglan Road)
Ingredients
Battered Fish:
1- 5oz piece of Cod
Sunflower oil, for deep-frying
2T Flour
6T Corn Flour
8oz Lager or Sparkling Water
Salt and Pepper to Season
Zest of ½ a lemon
Chips:
2 Maris Piper potatoes (russet potatoes work)
Directions
For the Battered Fish:
1. To make the beer batter, sift the flour and cornflour into a bowl. Make a well in the centre and add the lager.
2. Whisk the liquid ingredients together and then gradually whisk into the flour mixture until you have achieved a smooth batter and store in the fridge.
3. Cut the fish into pieces if desired, or leave the fish in one large piece.
4. Dust the strips of fish in a light coating of flour and then dredge in the batter, shaking off any excess.
5. Deep-fry for about 5 minutes, or until cooked through and golden brown. You may have to do this in batches depending on the size of your fryer. If you are cooking larger pieces of fish, start cooking it in the fryer and then transfer to the oven to finish cooking.
For the Chips:
1. Wash and peel the potatoes.
2. Cut the potatoes into thick cut chips and store in water until required. Pat the cut chips dry with a paper towel prior to cooking.
3. Deep fry in hot oil until almost fully cooked.
4. Lift the chips and allow the oil to heat back again and then drop them in for a final 30 seconds until they are crisp and golden brown (this will make them nice and crispy).
