Chinese Noodles

Chinese noodles are the hot favorite of children and adults alike. They can be vegetarian as well as non-vegetarian.  These noodles provide tremendous fun and nutrition to the food enthusiasts. When they are eaten by sucking them from rolling around the fork they create great scene and entertainment. One can also select from among the whole wheat and white flour noodles or between egg and non egg varieties.

Ingredients

Noodles – 200 gms

Water – 4-5 cups

Salt – 1/2 tsp or to taste.

Butter or vegetable oil – 1 tbsp

Pepper powder – 1/2 tsp or to taste

Tomato ketchup – 1 tbsp

Soya sauce (optional) – 1 tsp

Red chili powder (optional) – 1/4 tsp

Preparations:

Boil the water.

Boil water with noodles added to it for a span of 5 minutes.

Drain noodles in a separate bowl.

Add 1/2 tbsp oil to the noodles and keep them seperate.

In a pan, heat 1 tbsp oil, add chopped ginger, garlic and onion.

Sautee for 2 minutes.

Add beans.

Cook for 2 minutes stirring.

Add cabbage, capsicum, green peas.

Cook for 2 minutes.

Add tomatoes, salt, pepper powder, ketchup, Soya sauce.

Mix well and your cooked vegetable nix is ready.

Place the boiled noodles on the serving dish.

Add the cooked vegetables mix on the top of the noodles in a heap.

Serve immediately piping hot.

Alternatively noodles can also be added to the cooked vegetable mix befire serving too. They taste great as well. You can opt for leaving out pepper powder, tomato ketchup, soya sauce and add curry powder or rasam powder. It is a tasty change from the usual noodles.

Chinese Fried Rice and Chicken

Chinese fried rice is very famous. This is the simplest and quickest Chinese food recipe to be made.

Ingredients

1 large onion – diced,

6 Chinese sausages,

2 lbs/1kg Chicken thigh or breast meat – cut into chunks,

2 celery sticks sliced 1/2 inch/ 1 cm,

4 cups of cooked rice – at least a day old,

4 eggs – beaten,

2 cups frozen peas,

2 chicken stock cubes, Soy sauce, 1 red capsicum – diced and 4 shallots – cut finely.

Instructions:

Fry onions till soft.

Add Chinese sausages and fry for a couple of minutes.

Fry the pieces of chicken meat till they get brown in color.

Add celery.

Add rice and stir well to combine ingredients.

Fry for 5 minutes.

Make a well in the center by moving the rice and meat mixture to the sides of the fry pan.

Pour in beaten egg into the center of the well.

Leave to firm up (about 5 minutes) before stirring it up as you would with scrambled eggs.

Add frozen peas.

Sprinkle broken up stock cubes over rice.

Add soy sauce, salt and pepper to taste.

Combine it all well. Fry for another 5 minutes. Lastly add capsicum and spring onions.

Turn the heat off so that the capsicum and spring onions are warmed through but not cooked.

Chinese sauces are well known in western countries too. They are of the following types.

Soy sauce

Ssoy sauce is used to flavor sauces, stews, marinades and meat, fish and vegetable dishes. Chinese soy sauce is generally saltier and not as sweet as Japanese.

Plum sauce

A traditional sauce for duck and pork recipes, plum sauce is a thick, sweet-and-sour sauce. It is made with plums, apricots and seasonings and sometimes goes by the name ‘duck sauce.’

Shrimp with Lobster Sauce

Shrimp with Lobster Sauce is best among the popular Chinese food recipes.

1/2 teaspoons cornstarch

2 teaspoons cooking sherry

1 pound medium shrimp – peeled and deveined

4 tablespoons vegetable oil

2 cloves garlic, minced

1/4 pound ground pork

1 cup water

2 tablespoons soy sauce

1/4 teaspoon sugar

1/2 teaspoon salt

1 1/2 tablespoons cornstarch

1/4 cup cold water

1 egg, beaten

In a medium bowl, dissolve 1 1/2 teaspoons of cornstarch in the sherry. Add shrimp to the bowl, and toss to coat.

Preparations

After heating the oil in a large bowl for few minutes add shrimp to it and fry them until they turn pink in color. Pour the shrimp to another bowl while fry garlic in the remaining oil in the bowl. Fry for a few seconds, then add the ground pork. Cook, stirring constantly until pork is no longer pink.

Combine 1 cup water, soy sauce, sugar and salt; stir them with the pork. Boil them, cover, reduce heat to medium, and simmer for about 2 minutes. Mix together the remaining 1 1 /2 tablespoons of cornstarch and 1/4 cup cold water. Pour into the pan with the pork, and also return shrimp to the pan. Return to a simmer, and quickly stir while drizzling in the beaten egg. Serve hot over rice.
