The Swill Roll Pancake, Smoke House Deli, Kolkata

Giving the conventional flapjack a sweet twist, this one from Smoke House Deli will not only please your little one, it will bring out the child in you. Made using a slightly runny batter, this thin pancake is layered with a fresh fruit jam and folded like a Swiss roll before being cut into tiny circles, popped on skewers and served with maple syrup.

Ragi Pancake, Café Lota, Delhi

If you want pancakes that don’t make you feel guilty, head here. Not only are they made using a protein-rich ragi flour, they are also topped with healthy add-ons such as fresh bananas, popped amaranth and pomegranate seeds (and just a hint of maple syrup). This dish has a bit of everything—crunch, bite and sweetness—without the guilt.

Hitting the right spot with its sweet-and-savoury flavour pairing is this cafe at Bengaluru’s Shangri-La Hotel. The base of these pancakes is the typical flour-egg-and-sugar routine, but it’s the addition of aged balsamic vinegar and Gorgonzola that makes all the difference. The tall tower is topped with slabs of butter and maple syrup, and is perfect for when you’re ravenous for the sweet treat. Tofu Pancake, The Yoga House, Mumbai

Topped with a fresh salad of orange, micro greens, feta and pine nuts with a balsamic glaze, this dish is one of its kind in Mumbai. The recipe uses no eggs and is something you can even make a lunch out of. It’s designed by their consulting chef Karishma Sakhrani, who was also a MasterChef India Season 4 finalist, so expect gourmet touches.
