I love me some well-cooked chicken, don’t you? Chicken that is bursting with flavor and perfectly accented by the right combinations of vegetables. Chicken that is raised without antibiotics, hormones or steroids (like the Foster Farms Simply Raised Chicken Breasts that I’m using in this recipe).

And–let’s be real, moms–chicken that is quick to make for those busy weeknight dinners!

Today I’m excited to share one of my favorite chicken recipes that’s not only incredibly tasty but super healthy (and comes together in about 30 minutes): BBQ Chicken Lettuce Wraps with Goat Cheese and Sweet Potato Fries.



It’s a gluten-free, low-carb spin on the comforting, savory bliss of a BBQ chicken sandwich that uses lettuce leaves instead of a bun for a lighter taste!

You’ll love the flavors of the chicken–somewhere between Mexican and southern barbecue–and how the creamy herbed goat cheese, tomato and red onion adds a complex richness to the overall dish.

This easy chicken dinner recipe is accented by a side of the most amazingly flavored sweet potato fries. YUM!

It’s one of those healthy chicken recipes that you’ll come back to again and again!

BBQ Chicken Lettuce Wrap with Goat Cheese and Sweet Potato Fries

Ingredients

2 lbs Foster Farms Simply Raised Chicken Breasts

6 large lettuce leaves (Green, Red or Romaine Lettuce work best)

2 medium tomatoes, sliced

1/2 small red onion, sliced

2 ounces goat cheese (herbed or plain)

1/4 cup chopped cilantro

4 medium sweet potatoes, peeled and cut into fries

2 Tbsp olive oil

For the Rub:

3 Tbsp taco seasoning

2 Tbsp chili powder

1 Tbsp cumin

2 tsp oregano

1/2 tsp garlic powder

1/2 tsp salt

1/2 tsp pepper

Instructions

Heat oven to 450 degrees (for the fries). Gather all your ingredients.



Let’s start by making that amazing chicken.

First, carefully wash and blot dry the chicken breasts. Then combine the rub ingredients in a shallow bowl. Move 2 Tbsp of the rub to a small bowl (you’ll be using this later for the fries).

Place the chicken in the bowl and cover every nook and cranny with the amazing flavors of the rub (don’t forget all those flaps and folds).

Rubs are a great way to quickly add a ton of flavor to chicken. Speaking of great tasting chicken, we’ve found that chicken raised without antibiotics, hormones or steroids like Foster Farms Simply Raised really does taste better.

Because we’re on a high-protein-low-carb diet, our family eats a lot of chicken (maybe you do too?) so it’s important to us that our protein be of the highest quality since it constitutes a lot of what we eat.

I love that Foster Farms Simply Raised is locally grown in California (where I live) and is 100 percent vegetarian fed. It’s a great base for the healthier versions of comfort food (like this recipe) that I enjoy feeding my family!

Heat a gas or charcoal grill to about 400 degrees (so that it will be ready for that chicken)!

Then, let the chicken rest for about 10-15 minutes while you get the sweet potato fries started.

Peel and cut the sweet potatoes, placing the fries in a large stainless steel bowl as you cook.

When you’re done, pour 2 Tbsp of olive oil (or enough to adequately cover the fries) over the sweet potatoes and add the reserved 2 Tbsp of rub. Toss, and then place the fries on a large baking sheet.

Place the baking sheet in the oven and cook for 25-30 minutes, tossing once.

Really, homemade sweet potato fries aren’t too hard to make, and they’re so much healthier (and tastier) that any you could buy frozen.

Fries are one of those comfort foods that I refused to give up when we moved towards a healthier lifestyle three years ago after my husband was diagnosed as a Type 1 Diabetic. Since then we do our best to eat healthy meals that are high in protein and low in carbs (per doctor’s orders).

That’s why I’m always looking for ways to transform our family’s old comfort food favorites (like a BBQ chicken sandwich and fries) into something that’s a healthier option. I appreciate that Foster Farms has started an initiative along the same lines that they call “New Comfort Food”—transforming traditional recipes into healthier, fresher versions that include higher quality and locally raised ingredients.

Here’s a challenge: How can you update your well-loved (but perhaps unhealthy) comfort foods into lighter, healthier fare that’s mindfully grown? This chicken wrap is a great start!

Speaking of chicken, it’s time to get these chicken breasts on the grill!

Just wait until your backyard starts filling with the amazing aroma of this chicken on your BBQ! Yummy!!

Close the grill cover and cook about 5-6 minutes on each side, or until the internal temperature is 160-165 degrees.

Once the chicken is done, remove it from the grill and allow it to rest about 5-10 minutes (so that you don’t lose any juices).

Next, quickly prep the vegetables so that you can easily assemble everything: slice the tomatoes, thinly slice the red onion and chop the cilantro.

After the chicken has rested, slice it in thin strips. (Doesn’t it look amazing?! You can see how juicy and flavorful it is!)

To assemble the wraps, spread a spoonful or so of the goat cheese on the lettuce leaves (choose the largest ones you can, or place two smaller one close together for each wrap).

Then arrange the ingredients on the bottom half of the leaf like this: 3-4 slices of chicken, 2-3 slices of tomato, a few rings of red onion and then a sprinkling of chopped cilantro. Fold over the top to make a wrap, and carefully place the wrap on a plate.

When the fries are done, add a bit of cilantro over the top. Then place a small serving of fries next to the wrap. And that’s it!

Enjoy this yummy adaptation of one of our family’s favorite comfort foods!
