Already 18 gigantic restaurant openings are slated for one of the biggest spring opening seasons in Vegas history. Some have already tipped their concepts. Others are keeping tight lips on their plans even though they open today. The biggest names include Giada De Laurentiis, Guy Fieri and Daniel Boulud, while The Linq continues to debut its new food and beverage outlets and an entirely new resort, The Cromwell, debuts in May with dayclub and nightclub experiences meant to let you party around the clock.

800 Degrees Neapolitan Pizzeria
Location: Monte Carlo, 3770 Las Vegas Blvd. S.
Opening: Today at 11 a.m.

This Los Angeles-based, fast, hot and wildly popular pizza chain owned by SBE serves up personal pizzas cooked at 800 degrees in about one minute at ridiculously inexpensive prices. Order up one of their pre-determined pies or do like they do in Cali and build your own. Vegan and gluten-free options abound.

Imperial Tacos & Beer
Location: 3900 Paradise Road
Opening: Allegedly today, but owner John Simmons has been quiet about this one

John Simmons closed his original Firefly location after a salmonella outbreak in April and now plans to reopen the space as Imperial Tacos & Beer.

Yusho
Location: Monte Carlo, 3770 Las Vegas Blvd. S.
Opening: Next week
Charlie Trotter protege Matthias Merges brings his wildly successful Japanese yakitori and noodle house out of Chicago and into the new stretch of restaurants opening at the front of the Monte Carlo dubbed The Boulevard. The 4,170-square-foot space with a nearly $4 million budget expects to seat 76 with design accents from Merge's architect wife Rachel Crowl such as cedar wall finishes and timbers, exposed wood beams and planks on the ceiling and painted wood decor. Expect this to be the restaurant every foodie (including Eater Vegas) will gush over.

1923 Bourbon & Burlesque
Location: Mandalay Place, 3930 Las Vegas Blvd. S.
Opening: April 18

The new 1923 Bourbon & Burlesque going next to RM Seafood in the former Ivan Kane's Forty Deuce space promises a burlesque-themed live show with the now-redheaded Holly Madison, a band of musicians and jazz singers performing Golden Age jazz standards, 23 cigars, barrel-aged whiskey and cocktails.

Guy Fieri's Vegas Kitchen & Bar
Location: The Quad, 3535 Las Vegas Blvd. S.
Opening: Late April

The 9,316-square-foot gateway to Flavortown has been under construction for quite some time at The Quad. Guy Fieri, a UNLV grad and doctorate, plans to serve up tacos, burgers, wings and Vegas fries along with a 100 percent original menu. Fieri promises a patio, UNLV memorabilia on the walls plus late-night bites and a Bloody Mary brunch on the menus.

Shi Fang Market
Location: Palazzo, 3325 Las Vegas Blvd. S.
Opening: April?

Another hush-hush project, this $4 million Asian market plans to serve up dim sum, noodles, Korean barbecue and wok dishes from an open kitchen. The 9,361-square-foot space takes over the long-dormant Charlie Trotter space at the resort.

F.A.M.E.
Location: The Linq, 3475 Las Vegas Blvd. S.
Opening: May

This Asian market at The Linq plans to serve authentic street fare on the main floor with a contemporary Japanese restaurant with a Tokyo-style robata bar, sushi bar and tempura bar.on the upper level. Expect Fukuburger to make a special appearance in the stationary food truck on the main floor.

DB Brasserie
Location: Venetian, 3355 Las Vegas Blvd. S.
Opening: May
Daniel Boulud makes his triumphant return to Las Vegas with his second version of DB Brasserie. The restaurant, which formerly held court at Wynn Las Vegas until it closed in 2008, takes over the former Valentino space at the Venetian. Boulud, who originally planned to bring DBGB Kitchen & Bar to the resort, opted for something in between his high-end Daniel and more casual DBGB.

Sambalatte
Location: Monte Carlo, 3770 Las Vegas Blvd. S.
Opening: May

The wildly popular coffee shop that started in Boca Park and expanded to South Jones Boulevard and the 215 brings its third location to the front of Monte Carlo. Expect a 3,320-square-foot space for 116 guests.

BLVD Creamery
Location: Monte Carlo, 3770 Las Vegas Blvd. S.
Opening: May

With 3,052 square feet inside and 455-square-foot of patio, The Creamery will serve "handcrafted ice cream, flavored milk and other novelties." The ice cream will be made daily, onsite, by the resort's pastry division. The bright, splashy store is promoted as a "fun and high energy environment."

Giada
Location: The Cromwell, 3595 Las Vegas Blvd. S.
Opening: May 21

Pint-sized Giada De Laurentiis is opening her first restaurant, picking Las Vegas as the destination. Expect to find her California/Italian blend of items on the menu found on her Food Network shows and cookbooks. The 14,485-square-foot restaurant will seat 450 and carries a $6 million price tag.

Drai's Dayclub and Nightclub and Drai's After Hours
Location: The Cromwell, 3595 Las Vegas Blvd. S.
Opening: Memorial Day weekend

A dayclub with pool experiences on the roof. A nightclub up there too. And an after-hours party joint in the basement. All come right after the opening of The Cromwell.

11. BLT Steak
Location: Bally's Las Vegas, 3655 Las Vegas Blvd. S.
Opening: June

This restaurant taking over the Bally's Steakhouse plans to offer up an inverted question mark-shaped bar, walnut touches throughout and a gold-framed gas fireplace that looks out on the main room. The main 7,260-square-foot main dining room fills out with more than 250 seats. The total project can accommodate 389 guests. Fans of the Sterling Brunch will be thrilled to hear that the buffet service will be upgraded.

Scullery
Location: The Ogden, 150 Las Vegas Blvd. N.
Opening: Spring?

Long thought to open back in February, now Michael Cornthwaite has more time on his hands without the headaches of just closed Pork & Beans, The Beanery and The Boozery at the Container Park. Expect a 2,200-square-foot bar's agenda is Feb. 12.

LYFE Kitchen
Location: The District, 140 S. Green Valley Pkwy., Henderson
Opening: Mid-spring

This healthy restaurant is a favorite of Oprah Winfrey and promises dishes under 600 calories in addition to vegetarian, vegan, gluten-free and more.

Galleria Bar
Location: Caesars Palace, 3570 Las Vegas Blvd. S.
Opening: Unknown, but should open in spring

The lobby bar for Caesars Palace is in the midst of a major renovation, adding space and creating a 3,673-square-foot super-sized lobby showcase with $1.3 million. When complete, expect the 24-hour respite to be what Caesars calls, "an exceptional lobby bar."
