Chefs Brian Malarkey and Geno Bernardo are almost ready to transplant California to the Strip.

Chef and restaurateur Brian Malarkey is on the verge of debuting Herringbone at Aria, building on his previous La Jolla, Los Angeles and Santa Monica locations. Taking over the former second-floor Gold Lounge space, a dramatic remodel has added whole new outdoor dining opportunity.

Promised for the menu, a taste of "California Coastal Cuisine" and "Fish Meats Field" creations, overseen by executive chef Geno Bernardo, formerly of Nove Italiano.

Featuring a very spacious lounge at the front of the restaurant, guests can sample small plates, a lunch menu or a full dinner experience. Self-described as a menu dotted with "whimsy," dishes include California-sourced seafood, hearty steaks and choices like meatballs upgraded with "Nana's Pork Gravy" and the indulgent dare of "Death by Potatoes."

Herringbone is still on target for an official Dec. 28 debut.
