One of my favorite things is cooking dinner. It’s a good thing that I like it because I cook for 11 people every night. I like to try new recipes, but I also have old favorites. It’s extremely satisfying to gather my whole family around the table every night and see my family members enjoying dinner together and sharing about their day.

Another reason I like to cook is that I also listen to audiobooks while I chop, stir and sauté.

It’s “me” time that I often don’t get in the middle of a busy life.

Here are my favorite audiobooks I’ve recently listened to.

Teaching from Rest by Sarah Mackenzie If you’re a homeschooling parent Sarah’s book is an encouraging read. Sarah reminds us we don’t need to do it all, but rather focus on what really matters. Sarah reads the books, which I loved, since I also enjoy listening to her on her podcast Read Aloud Revival. The audiobook is currently less than $5!

Fervent by Priscilla Shirer I loved the movie War Room by the Erwin Brothers. If you’ve wanted to become diligent in your own prayer life this is a book for you. Priscilla reads the books and her passion comes through!

In the Field of Grace by Tessa Afshar This Christian fiction novel tells the story of Naomi, Ruth and Boaz. We listened to this on a family road trip and all of us enjoyed it!

Easy Pork Verde

2 lbs boneless pork chops, cubed

3 TBS olive oil

2 15-oz cans tomato sauce

1 4-oz can diced green chiles

1 1/2 cups cheddar cheese

Cooked Rice

In an extra large skillet, sauté the pork in the olive oil on medium heat until cooked through. When pork is cooked added tomato sauce, green chiles, and cheese. Cook over medium heat until cheese is melted, stirring so it doesn’t stick to pan or burn. Serve over cooked rice.
