Ethan Stowell and Four Seasons Hotel Seattle announce the name of their new restaurant collaboration: Goldfinch Tavern. Named for the state bird of Washington, the American goldfinch, the downtown restaurant is slated to open in June 2015. Goldfinch Tavern will offer approachably sophisticated Pacific Northwest cuisine, simply prepared using the finest regional ingredients, and served in a dining room with maritime-inspired design and sweeping views of Elliott Bay.

The upscale tavern pays homage to the city’s pioneer days, providing a place for travellers and locals to both socialise and conduct business, all while enjoying food and drink.

“Goldfinch Tavern is going to be the perfect place to just grab a drink or stay on for a leisurely dinner, whether as a solo traveller or with a group of friends or associates,” says Ilse Harley, General Manager of Four Seasons Hotel Seattle.

Joe Ritchie, previously of Mkt., the much-lauded Ethan Stowell Restaurant in the Tangletown neighbourhood, will head the kitchen. He and Stowell have created a menu packed with upscale classics, as well as more modern dishes. The menu is designed to provide for an array of dining styles: guests can go classic with a coursed meal or order a variety of plates to share family style for the table.

Goldfinch Tavern’s design inspiration draws heavily from the Hotel’s location overlooking the waterfront. Shades of blue mingle with amber and charcoal, much like colours of the sunset over Elliott Bay. Dark oak wood brings warmth to the space and scenic views provide the ideal backdrop for a great meal, while a central stone-topped bar anchors the restaurant. There will be 115 seats in the dining room and 44 in the bar area, as well as two private dining rooms with space for 16 people in each.
