Every week on Top 20 Country Countdown our host Nan Kelley counts down your favorite videos — but when she’s away from the studio she’s likely to be found in her kitchen, creating healthy, delicious meals! Nan likes to keep it simple, cooking entire meals using only one pan. Her husband Charlie lovingly gave her the nickname “One Pan Nan” — and now that’s also the name of her new cookbook [get it HERE!]. We asked Nan to share some of her recipes with us. This week, Nan shares her recipe for Apple Pie Moonshine Muffins. Check back every other week for a new one!
“When I moved to Nashville after college, I ate out a lot because I didn’t know how to cook. I never really had to cook growing up because my mom & grandmother did it all & my aunt & uncle were in the restaurant business, so all I had to do was show up at the table…and you never had to ask me twice to come to dinner!
My former roommate Karen (she gave me this recipe along with many others) really helped transform me from a professional drive-thru customer to a you-can-do-this-at home cook! The bananas & white wine version of this (it’s in my book) is my absolute go-to dessert choice, but when strawberry season comes around, there better be plenty of vanilla bean ice cream in the freezer! This is very fast, very easy and tastes really great. Serve it in a nice sorbet dish or little glass bowl, with a fancy cookie or by itself and brace yourself for the compliments. Ingredients
2 pints of strawberries
1/3 cup of red wine
1 3-inch long cinnamon stick
¼ cup sugar
1/8 teaspoon ground pepper
Directions
Wash, core & slice fresh strawberries. If they are small, cut in half; if large, cut in quarters. Combine sugar, red wine & cinnamon stick in a large skillet. Cook over medium-high heat until sugar dissolves-about 3 minutes. Add strawberries & pepper; cook until berries soften slightly-about 4 to 5 minutes. Remove from heat, discard stick and divide among dishes.
Serve with vanilla ice cream.
