We are massive Pasta fans, but it can weigh you down. Many are looking for healthier alternatives to their favourites and there’s a reason that everyone is going mad for this Zucchini Lasagna. We were intrigued the minute we laid eyes on it. The feedback across all the big sites is that it’s a winner dinner!

The creator of the recipe says one of the secrets to her popular dish is grilling the zucchini. It’s an important element as zucchini is watery. Once you grill, let the water drain out on some paper towel.


She also suggests using a Mandoline for slicing your Zucchini. While we’re on the subject of handy things for the kitchen, you might want to grab yourself a Vegetable Spiralizer they are a must have. You can also use them to make Zoodles which is Zucchini Noodles!

How To Make Zucchini Lasagna -:

1 lb 93% lean ground beef

1 1/2 teaspoons kosher salt

1 tsp olive oil

1/2 large onion, chopped

3 cloves garlic, minced

1 (28 oz can) crushed tomatoes

2 tbsp chopped fresh basil

black pepper, to taste

3 medium (8 ounces each) zucchini, sliced 1/8″ thick

1 1/2 cups part-skim ricotta

1/4 cup Parmigiano Reggiano

1 large egg

16 oz (4 cups) shredded part-skim mozzarella cheese
