Hi guys.
I took a break. I mean, that’s fairly obvious, since it’s been, oh, one (two … three maybe) months since I’ve posted. College was a bigger adjustment than I thought. This spring though, I’m going to try to figure out a blog schedule that works with college life. I’m not exactly sure what that looks like, I’m not even sure that there is one. But I’m here to try and make some dang good food while I’m at it.
Do I miss baking? To be honest, not really. I spend my time very differently now and it’s not bad, just different. Also, I don’t really eat dessert anymore. Which is so weird, because dessert was my life for years. Guess people can change. I may or may not have had an identity crisis over this no dessert thang. Just kidding. But not about the identity crisis. Growing up is hard sometimes but thankfully seeking is a good thing.
The things you’re going to see on the blog are not going to necessarily be specific, creative, healthy dessert recipes like usual. They’ll be exactly what I’m eating that weekend that I’m home and that might be dessert, it also might be cookies I’m making for a party, or something not dessert related at all, such as … beer bread.
The irony isn’t lost on me. I go to a Christian college. What’s the first thing I make on break?

Beer bread is amazing. It’s moist, it’s dense, it’s a little crumbly, it’s perfect for soups and to be honest, on it’s own too. And it’s incredibly simple. There are only four ingredients and one bowl involved. Five year old me could make this. Just get an older pal to open the bottle of beer. Eighteen year old me had to have Mom help me because hello, it’s challenging and I was struggling.
This is a guaranteed hit. It’s different, but comforting, and absolutely delicious.
Four Ingredient Beer Bread

Ingredients
1 stick butter, melted
½ cup sugar
1 (12 oz) bottle of beer
3 cups self rising flour (or 3 cups flour and 4-1/2 teaspoons baking powder)
Instructions
Preheat oven to 375. Grease and flour a bread pan.
In a large bowl, melt butter in the microwave. Stir in sugar and beer.
Add flour and stir gently until all combined.
Spread into pan and bake for 55 minutes or until toothpick inserted comes out clean.
