Oh eggnog. You have become the official drink of the littles in our family. The always perfect accompaniment to any snack. The ultimate pourable sign of maturity. And the only acceptable form of heavy whipping cream.

Sure beats fruitcake.

Eggnog is the featured ingredient of this month’s #foodieextravaganza! I originally wasn’t going to participate because eggnog = extreme dairy but then I remembered rum extract and this cake happened Saturday night just in time for the Sunday deadline and here I am!

This cake. I’ve decided I am a breakfast person because my most favorite things I’ve made for the blog recently have been these scones, these brownie chocolate chip cinnamon roll knots, and now this coffee cake. I’m also seeing a theme of chocolate chips …

Oh banana eggnog chocolate chip coffee cake. You are so moist, so thick, so sweet, and so rich. Your chocolate chip/brown sugar/walnut crumble is to die for. A tall slice of you makes the morning blues go away. The swirls of eggnog flavor pair beautifully with the banana and chocolate chips. I cannot sing your praises enough. Mainly because I can’t sing at all thanks to a sore throat.

But that’s irrelevant.

And it IS dairy free. No butter thanks to coconut oil, no milk thanks to almond milk, and rum extract and nutmeg take care of the eggnog flavor. To make my own mini eggnog for this recipe, I combined almond milk, an extra egg yolk, rum extract, and nutmeg. This is how you get a dairy free version of eggnog and you can control how strong the flavor is without overdoing the liquid:dry ingredient ratio since it’s nutmeg and rum extract. I loved it!

I’m telling you, make this coffee cake. If you have a cold, your taste buds will sing for you. I’m pretty sure mine busted out Pentatonix’s Mary Did You Know. Also go watch that video. That song is truly beautiful.

Banana Eggnog Chocolate Chip Coffee Cake

Ingredients

Topping:

½ cup packed brown sugar

⅓ cup chopped walnuts

2 Tablespoons all purpose flour

½ teaspoon nutmeg

¾ cup mini chocolate chips (I use Enjoy Life)

1 Tablespoon coconut oil, melted

Cake:

½ cup whole wheat flour

1 cup all purpose flour

1 teaspoon nutmeg

¾ cup packed brown sugar

1 Tablespoon baking soda

1 teaspoon rum extract

1 egg + 1 yolk

¼ cup almond milk

½ cup coconut oil, melted

3 large very ripe bananas (mashed until smooth)

Instructions

For topping:

Stir together brown sugar, walnuts, flour, nutmeg, and chocolate chips. Add in coconut oil and stir until combined. Set aside.

For cake:

Grease and flour a 9 inch cake pan and set aside.

In a large bowl, stir whole wheat flour, all purpose flour, nutmeg, brown sugar, and baking soda together.

In a small bowl, whisk rum extract, egg and egg yolk, almond milk, coconut oil, and mashed bananas together.

Add wet ingredients to dry ingredients and stir well.

Add half of the cake batter to the prepared pan. Sprinkle evenly with half of the topping. Top with the rest of the cake batter and sprinkle evenly with the rest of the topping.

Bake for 40-45 minutes or until toothpick inserted comes out clean.
