I found out about this amazing group thanks to Ashley at The Recipe Rebel.  How fitting is it that my first time with them, the ingredient is peanut butter?  Made my little heart happy!  And I’m sharing one of my family’s all time favorite peanut butter treats today, but with some dairy free substitutes.   When I didn’t grab the butter, there was a minor riot.  At this house, you just do NOT mess with certain recipes.  Because apparently, a certain member of our family is always messing around with recipes …



But I am proud to say that no one complained.  Honestly though, who is going to complain about a thick and chewy peanut butter blondie studded with creamy peanut butter chips and swirled with chocolate syrup?  Not me.  And not my family either.  Thanks to coconut oil, whole wheat, and peanut butter galore, these are not only irresistible, but stick with ya good.  They are hearty little treats, holding up to long trips, backpack lunches, and more sports tournaments than I can count.

The Reeses peanut butter chips aren’t dairy free, so I just made my own.  It is one of the easiest things – peanut butter, coconut oil, honey etc, piped onto a cookie sheet and frozen for 30 minutes.  Bam, instant PB chips.  Thankfully, the chocolate syrup is dairy free.  I have tried making my own but it wasn’t successful so I just stuck with Hershey’s.

So if you have a thing for a crackly top in between the chocolate swirls that melts into a chewy peanut buttery bar, this is for you.

{Dairy Free} Chocolate Syrup Swirled Peanut Butter Blondies #foodieextravaganza

Ingredients

½ cup coconut oil, melted

¼ cup peanut butter

1 cup brown sugar

¾ cup granulated sugar

3 eggs

2 cups flour (I used half whole wheat, half all purpose)

2 teaspoons baking powder

½ cup chocolate syrup

1 Batch Peanut Butter Chips:

¾ cup peanut butter

3 Tablespoons powdered sugar

3 Tablespoons coconut oil, melted

3 Tablespoons almond milk

Instructions

Make peanut butter chips:

Whisk peanut butter, powdered sugar, coconut oil, and milk together. Transfer to a piping bag (or Ziploc bag with one corner snipped off) and pipe drops onto a parchment lined cookie sheet. Freeze until firm, about 30 minutes.

Preheat oven to 350 and lightly grease 9×13 pan.

Beat coconut oil, peanut butter, sugar and eggs together.

Stir in flour and baking powder until well mixed.

Remove peanut butter chips from freezer and stir into blondie base.

Spread mixture into prepared pan and swirl with chocolate syrup.

Bake for 30 minutes or until toothpick inserted comes out almost clean.
