Canning and Preserving, What You Need and Need to Know
The CDC has these tips:
1. Use proper canning techniques.
Make sure your food preservation information is always current with up-to-date, scientifically tested guidelines. Don’t use outdated publications or cookbooks, even if they were handed down to you from trusted family cooks.
2. Use the right equipment for the kind of foods that you are canning.
Always use a pressure canner or cooker. Pressure canning is the only recommended method for canning vegetables, meat, poultry, and seafood. Pressure canning kills the germ that causes botulism when foods are processed at the correct time and pressure in pressure canners or cookers.

Choose proper ingredients including unblemished produce that’s not overly ripe. When recipes call for salt, use only canning and pickling salts
Use jars and lids specifically designed for canning. Always use new lids; you may re-use jar rings.
Check all jars for chips and cracks before processing.
Select the proper method – use boiling water canners only for fruits, tomatoes and pickles since the temperature of boiling water is sufficient to kill bacteria in these high acid foods. Pressure canning safely preserves low-acid vegetables and meats.
