I’m super excited about today’s post! I am participating in a monthly challenge alongside other amazing bloggers to use a key ingredient in a recipe. Each month a different blogger will choose an ingredient, and we all have to develop a recipe using that ingredient. Fun, right?! This month’s ingredient is cilantro, which is great because I absolutely love cilantro! I know it’s an acquired taste for some, but I think it adds real flavor to a dish. I decided to post a recipe that I’ve been making for a few years, however have yet to post on the blog. This is hands down my absolute favorite salsa recipe, ever. The tangy mango mixed with the creamy avocado mixed with the bite of the onion mixed with the flavor of the cilantro, all brought together with lime juice… it’s just delicious!
I started making this fresh salsa recipe about five years ago right before I went on a volunteer trip to Honduras. I was attending a pot luck dinner along with my other trip members and we needed to bring some sort of Honduran inspired food. I researched a bit and found out that fresh salsa, especially involving mangoes and avocados, was a popular dish in Honduras. So I tweaked it a bit and came up with this, and I’ve been making this fresh salsa recipe  ever since.

What can I say? I was in love the first time I scooped my chip in this: All of the flavors combined are truly amazing.



But honestly, I don’t even need chips to eat this. Sometimes I just eat it as a salad and devour heaping spoonfuls. It’s that good. Seriously. It’s like eating a spoonful–or chipful– of tropical paradise.

And writing this post is making me crave some, but sadly I don’t have any left in my fridge. I guess it’s off to the grocery store tomorrow!

Mango, Avocado and Cilantro Salsa

A deliciously refreshing fresh salsa with mango, avocado, red onion and cilantro.

Recipe type: Appetizer

Ingredients

2 mangoes: peeled, pitted and diced

3 haas avocados: peeled, pitted and diced

½ a red onion: diced

Juice from one large lime

⅓ cup chopped cilantro

Instructions

Combine mangoes, avocados, red onion and cilantro.

Add lime juice and toss to combine.

Chill in refrigerator for 30 minutes.

Serve with chips (or eat as a salad).

Dig in!
