I am very proud of my first Paleodiet compatible recipe for Thermomix :-) A delicious Asparagus Omelette with Sauté Chicken which makes a great breakfast, full of nutrients and energy.

I like this recipe because it is simply delicious and satisfying to eat. Omelette is a great option when you're in a hurry or out of ideas, especially if you manage to gather your eggs straight from the farm, like I do when I visit my Zia who lives in the countryside and keeps chickens in the yard! When she phones me and says "I have too many eggs here, come get them for the kids!" we literally jump in the car looking forward to a great adventure at Zia's little farm house. Do I need to tell you how much fun this is for the children, and how happy they are to come home and cook their eggs in the Thermomix?
That's another brilliant thing about this machine: I feel safer having the children around me when I cook, I let them help more and they love it, too! If before they would be playing while I was cooking, now we can all be together in the kitchen, laughing and making a bit of a mess - they're very quick to disappear when it's time to clean up though ;-)
Ingredients
- 200 gr Asparugus spears
- 200 gr Water
- 2 Spring Onions
- 1 Tsp Thyme Leaves
- 4 Eggs
- pinch Nutmeg
- 1 Tsp Thermomix Vegetable Stock Cube
- 4 Tsp Olive Oil.
- 1/4 Onion
- 100 gr Chicken, cubed
Let's make our Asparagus Omelette with Sauté Chicken
Marinade chicken in evoo, rosemary and garlic and put aside.
Put onion in the bowl and chop. 3 Sec. Speed 5.
Add oil and sauté. 3 Min. 100°C Speed 1.
Add the chicken and brown. 5 Min. 100°C Speed Gentle Stirring Reverse.
Put chicken aside and proceed with cooking the eggs.
Place water into TM bowl, asparagus slices and spears into simmering basket and cook for 10 Min. Varoma Speed 2.
Remove simmering basket, tip water out, rinse TM bowl with cold water and dry.
Add roughly cut asparagus, spring onions and thyme and chop 7 Sec. Speed 5 and scrape down.
Add eggs, nutmeg, and Thermomix Vegetable Stock Cube and whisk 10 Sec. Speed 4.
Add asparagus slices, reserving tips.
Heat olive oil in a 25cm frying pan and when hot pour in egg mixture.
Scatter over asparagus tips and cook over medium heat until egg starts to set.
When the eggs are ready, put the chicken on top and serve hot.
