Freezer Meals

Who hasn’t had leftovers they wanted to save for later?  Most of you have surely made too much of something before and found yourself with leftovers.  It’s easy enough to pop them into the fridge.  But, a surprising amount of foods can actually be frozen to eat later.  That way you can eat it much later.  You can even eat it months later if you want!



Favorite Freezer Meals

As you know, I had a baby recently  This made cooking and baking a little more difficult to organize.  Usually, I like to bake/cook for hours at a time at least once a week.  So, when I had family visiting me over the last couple of months I took full advantage of the help.  I spent whole days cooking up huge batches of everything and sticking it in my deep freezer.

Making large batches of freezer-friendly food is the only way I’ve been able to stay well fed these months.  Without further ado, I’d like to share with you my favorite meals to keep in the freezer.

Breakfast Burritos

Cinnamon and Chocolate Muffins

Veggie Fried Rice

Chocolate Chip Oatmeal Cookies

Quiche

Chocolate Chip Scones

Granola

Thawing and Devouring

I have to say that popping something into the microwave for a few seconds while holding my son in the other arm is way easier than whipping up a fresh meal.  Having that something be a homemade meal that I prepared myself is just the best feeling.  I’ve been all about making my own meals from scratch for so long that when I have a pre-made granola bar or one of those packaged frozen meals it just feels wrong.  I love my homemade food, even when it doesn’t turn out great.  Knowing what’s on my plate just gives me peace of mind.  These meals are all pretty easy to make and it’s seriously a sad day when we find out the last breakfast burrito has been eaten around here.  Haha!

Also, I have to say that when you have a hectic mom lifestyle one-handed foods are the BEST.  Those breakfast burritos were a major life-saver in the early weeks.  Although, sitting down to eat something at a table does feel very luxurious and I do it when I can.

Make Your Own

Why not make your own freezer meals?  It’s way cheaper than buying the “healthy” ones at the store.  Plus now you really know what’s on your plate.  And this way you can have all your favorites (provided they freeze well).  Next time you make a favorite meal, make a little extra and put it in a freezer safe bag in your freezer.  Try it out and see how it goes.
