2017-01-02

This is one of those posts that always brings a smile to my face and honestly, helps me more than you’ll ever know.  This gives me an idea on what you guys are and are not into.  I get insight on what types of recipes you want to see and maybe less of ones that you don’t. I have a TON of recipes for 2017 already – yes, even 2 days into the year and a bunch of ideas for new recipes thanks to looking at these results.

I’m thinking 2017 you guys are going to be super stoked about these recipes and never at a loss for a great recipe.

Kicking off this past year you guys went NUTS over my Baked Brie with Cranberry Relish.  OMG this thing went viral in just a few short hours after being posted. And my Candied Bacon Brussels Sprouts quickly became the top requested recipe for both Christmas and Thanksgiving for a side dish. And not to say I told you so buuuuuuuut I told you so *wink* that my Buttery Fruit Spread Bars were going to be a huge for Christmas cookies.  And Mom’s Classic Pot Roast recipe that I converted to a Pressure Cooker… OMG you literally brought tears to my eyes. This was such a personal recipe for me and the fact that you guys loved it so much. Thank you!   And that Torta … you made it such a Sunday classic.

Crantastic Healthy Craisins® Dried Cranberries and Turkey Wrap
Candied Bacon Wrapped Brussels Sprouts with Maple Dijon Glaze
Italian Zucchini Rustica – Pasta Pie
Pressure Cooker Mom’s Classic Pot Roast with Savory Onion Gravy
Buttery Shortbread Fruit Spread Glazed Bars

One of things I strive on my website is to give you a variety of recipes – healthy, sinful, fast, slow roasted and classics. For the past eh, 3-4 years since I started posting pressure cooker recipes only a few of you guys were into pressure cookers or even had one.  Now so many of you have them that it seems they’ve replaced the slow cooker. I still use a slow cooker however  with how busy my life is the pressure cooker is my go-to way to cook.  I often use them the weekend when I want to make a healthy lunch meal for the week.  It’s so awesome to take a few pounds of chicken, pressure cook them and voila – easy peasy lunches!Southwest Turkey Burgers with Roasted Tomatillo Salsa Verde
Pressure Cooker Asian Sticky Ginger Chicken Thighs
Grilled Flatbread Ham & Cheese Hoagie Pizza

Turkey burgers rock but after a while even they need a boost!  Adding a roasted tomatillo salsa verde definitely kicks these burgers in the buns! And those pressure cooker thighs…SERIOUSLY DELICIOUS!  And of course there’d be a pizza. Pizza just rocks!

Salsa Chicken Pinwheels
Chocolate Chunk Donuts with Fudgy Ganache Glaze
Pot Roast Breakfast Hash

Those Salsa Chicken Pinwheels became one of the most popular appetizers for parties, football and hockey games.  They are easy, simple and versatile.  Those donuts – yeah I kinda have a feeling when I was posting these that they were going to be a hit. I mean it’s chocolate on chocolate on chocolate. These are the diet blowers, yoga pant splitters and happy face donuts.

That Pot Roast hash honestly I never thought it would be such a huge hit.  I mean it’s one of those recipes that are so simple, uses leftovers and is good ol’ comfort food (are 2am post-bar food). It’s recipes like that remind me that I don’t need to give you recipes that are 37 steps or have 900 ingredients.  That simple is always best; just like Mama said. That recipe came out making too much food and not wanting to eat leftovers as-is. Since you guys already love my crispy home fries, I figured just to merge that recipe with my pot roast.  And let’s face it – anything with cheese on it is always awesome.

Zucchini Ricotta Veggie Burgers
Cheesy Spaghetti Squash Pizza
Dulce de Leche Chocoflan

This past year was the year of veggie-type take overs – the Zucchini Ricotta burgers and Spaghetti Squash Pizza Crust are examples of that.  The Spaghetti Squash crust was one that I was seriously so excited over when I came up with it.  I just knew it was going to go viral and people were going to go nuts over.  Unlike cauliflower or zucchini crust, this is firm and holds up like a regular pizza crust. It’s chewy and crispy.  And OMG it’s soooooooo good!

Last we have that Dulce de Leche Chocoflan.  It’s one of those magic cakes that defies logic but something mind-blowing happens as it bakes.
