One of my favorite recipes to bake for family and friends is this gluten free banana bread! With just a few ingredients, minimal tools and prep needed…you’ll be on your way to gluten-free heaven.

We love this delicious and easy treat for the Fall, Winter, or any time of the year, really! It’s just the right amount sweet and loaded with great banana flavor. My boys loved it so much and devoured it when they got home from school today.



It can be hard to find a banana bread recipe that is moist and crumby while still using gluten free ingredients – but we have it! Gluten free oats add a hearty texture to this healthy recipe, and it makes the perfect breakfast, quick snack or afternoon dessert. We love topping the banana bread off with a fresh jam, spread of butter or even ice cream!

Here’s what you’ll need to whip up this gluten free banana bread for your family:

Gluten Free Banana Bread Recipe



INGREDIENTS:

3 very ripe bananas (Look for brown spots & softness)

1 whole egg

½ tsp of pure vanilla extract

3 tbsp of coconut oil (Note: proportions change when the oil is solid versus liquid. Do a quick zap in the microwave to melt the oil before measuring)

1 tbsp of honey or agave nectar

¾ cup milk (we used dairy in this recipe, almond or soy work great too!)

¼ cup cane sugar

¼ cup brown sugar

3 tbsp baking powder

¾ tsp sea salt

½ ground cinnamon

½ tbsp nutmeg (or any of your other favorite warm spices)

1 ¼ cup almond meal

1 ¼ cup gluten free flour

¾ c gluten free oats

DIRECTIONS:

First, preheat your oven to 350 degrees and on a convection setting if you have (this circulates the heat evenly inside). Grease a rectangular “loaf” pan for perfect bread slices with a non-stick spray or oil.

Peel bananas and mash together in a large bowl. A fork or masher works best for this job. Add wet ingredients first to help in the blending process: egg, vanilla, honey, oil and milk.

Next work in dry ingredients: sugars, baking powder, salt, spices, then lastly the flours and oats. With a constant stir, all ingredients blend in wonderfully without clumping which makes for an easy clean up using just one bowl.
