Sixteen youth leaders from Boyle Heights and East Los Angeles share their effortless yet nutritious recipes that even their high school peers could make in the recently released collaborative, “Mi Vida, Mi Salud Cookbook,” Boyle Heights Beat reports.

The teens were in charge of overseeing the entire project, which was sponsored by Youth Institute of Weingart East Los Angeles YMCA and other organizations. The youths selected the recipes, collaborated on the layout and implemented the final design. The result was a cookbook that features dozens of recipes that balances culturally relevant Latino dishes with the latest trends in healthy eating. Lentil soup, Mexican rice, pozole, kale pomegranate salad, pumpkin smoothie and veggie wraps are just a sample of some recipes.
