He started his career at the young age of just 18 and from there he has been crowned with the fast growth and innumerable goodwill of taste, ethnic flavours, purity.

He genuinely loves Indian culture and has deep understanding of aroma, taste and blends of delicacies of both ethnic & international cuisines, as he travels often to the world to keep him updated to new and best recipes. This is how he brings to the people of Ireland the most exciting & top quality ethnic dining experiences all the year around.

Sateesh is inspired by simple, honest food that draws influence from its local sourcing. Where ever possible, his menus always reflects the best ethnic and all popular ingredients drawn from the wonderful supply of fresh food from around the city and incredible food supplies from Eurasia Supermarket- Ireland largest multi ethnic mega supermarket.

Prior to joining Punjabi by Nature, Sateesh has held a number of key positions in award-winning International Hotels Chains in India & Dublin like Oberoi’s Group, Rasam Indian Restaurant& Eagle House. Where are you from?

Hyderabad – The Southern Proud of India. The city known by its wealth of architecture, refined traditions, exquisitely cultured way of life, delicacies, cuisines and origin of all Biryanis, royal mughlai flavours and more.

What inspired you to become a Chef?

I have grown up in a restaurant environment as my father has a small restaurant in the outskirt of the town. My interest not only got developed from there but I also gained some business acumen & importance of quality driven food & its preparations from there. I see the chef cooking and later got encouragement for cooking & experimenting food.

How did you become a Chef?

I could not imagine myself other than a chef as I cannot keep myself apart from experimenting world cuisines & recipes. I joined the Indian Hotel Management College at Vishakhapatnam, India for doing Graduation. There I acquired the technical skills and knowhow of food preparations, quality, certifications, hygiene and best of sourcing methods. Soon Oberoi’s after the graduation, given me an opportunity as Comme Chef in 2000. There I learned that food is a pleasure beyond mere necessity and that flavours, blends should be shared with both joy and passion. It was here that I learned deep rooted art of refining flavours & the importance of sourcing and using the best & pure ingredients for making a world class recipe. I enjoyed working there for close to 4 yrs and then I moved to Dublin for setting up the Rasam Indian Restaurant. After spending 6 yrs with them, I moved to Eagle House Pub where I was cooking Indian, European and Irish cuisines, a mixture of world best cuisines. Now, joined recently, Punjabi by Nature.

What Ingredients do you use?

I use the freshest ingredients and 100% natural fresh & healthy food from around the city’s best & renowned vendors for fresh meat & vegetables. The spices & other ingredients are being directly sourced from Ireland largest and most authentic ethnic mega supermarket known as Eurasia which is synonym to great trust, purity, variety & great taste. The very best local products garnished with the world’s finest spices pooled with exciting Punjabi by Nature team gives customers beautifully presented, the best food.

Malabar Kori to serve 4 people

Ingredients

4 Chicken breasts
1 teaspoon red chilli powder
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 tablespoon ginger paste
2 tablespoon garlic paste
2 tablespoon coconut oil
½ teaspoon mustard seeds
10 curry leaves
2 whole red chillies
2 onions chopped
4 fresh tomatoes, chopped
150 ml coconut milk
1 tablespoon tamarind pulp
Salt, to flavour

Method

1. Dice the chicken breasts
2. Marinate the chicken pieces in a pinch of salt, a pinch of red chilli powder, a pinch of turmeric powder, a pinch of coriander powder and a teaspoon each of the ginger and garlic paste.
3. Heat the pan with coconut oil and add mustard seeds, curry leaves and whole red chillies. Cook for a few minutes, add chopped onions and cook to golden brown.
4. Add the remainder of the pastes, salt, red chilli powder, turmeric powder and coriander powder. Sauté for few minutes and add the chopped tomatoes.
5. Simmer until the chopped tomatoes are cooked through.
6. Add the chicken and gradually mix in the coconut milk and tamarind pulp.
7. Simmer for a further 10-12 minutes.
8. Serve with naan bread or rice.
