Rustic Stone Restaurant adds creativity and flavour to the finest ingredients in the most nutritious way possible. In today’s ever changing restaurant environment, there is a demand for greater choice and the need to cater for individual tastes and nutritional requirements. At Rustic Stone we feel we have something for everyone. Our restaurant is a fun, inviting and relaxed place to eat where everyone’s needs, diets and indulgences are provided for.

Restaurant Nutrition

At Rustic Stone we create food that is as tasty as it is nutritious. Our aim is to allow people to choose what they eat in accordance to what they look for in a meal, without sacrificing flavour.

We cook seasonally with olive oil, and nowhere will you find butter or cream in any of our dishes. We use lots of fresh herbs and salads grown by farmers we know and trust. We use organic produce where possible, always insisting on freshness. We focus on the positive virtues of different ingredients and draw out the flavour as well as the goodness from within.

Restaurant Suppliers

Our suppliers are an integral part of what we ultimately create on the plate. Their high standards and pursuit of excellence are crucial components in helping us to achieve consistency. Staying true to our philosophy of supporting home-grown produce and showcasing Irish ingredients is at the heart of what we do.

Rustic Stone Cooking

Rustic Stone adopts an old Spanish technique which is still quite new in Ireland. Customers are served their meat or fish dishes on a hot volcanic stone which they cook themselves. This method adds an element of theatre to the meal yet at the same time adds to customer preference allowing them to have their dish cooked exactly how they like it. Also on the menu is a list of salads and dressings carefully chosen by Dylan which is left to the customers to add and mix themselves. Along with these salads is a choice of new and unique side orders which are packed full of flavour. Dylan is particularly excited with his new range of sugar free cocktails and desserts which he has created specifically for Rustic Stone. Group Booking

Rustic Stone is located on 17 South Great Georges Street and was officially opened to the public on Tuesday the 24th of August. The restaurant is open for lunch from 12pm to 2:30pm and for dinner from 5:30pm to 11pm. About Dylan McGrath

Dylan was born in Dublin and raised in Belfast. He studied in Portrush Catering College and Belfast Institute. He began his first Job in Jurys Inn, Belfast and then left to work in Roscoffs, Northern Irelands only Michelin starred restaurant. He also worked at The Commons Restaurant and Peacock Alley with most of his culinary skills being acquired at John Burton Race in L’Ortolan and Tom Aikens in Chelsea where he became Head Chef.

Dylan returned home to take up his own Head Chef position in Mint restaurant where he received a Michelin star. People who have worked with Dylan describe him as driven, ambitious, determined, innovative and intense. He is known to be incredibly passionate about his work and has been described by food critics as a “creative genius” and an “incredibly talented chef.”

Dylan opened Rustic Stone in August 2010 that is a casual dining, contemporary restaurant which delivers on the flavours Dylan is so passionate about but without the formality he previously would have been associated with.

From Rustic Stone, the Raw menu has emerged, which was developed by Dylan keeping his ethos on nutrition and flavour to the fore.

FULL/HALF PORTION I’ve chosen little bites that are affordable, very tasty and nutritious – perfect for grazing. Whether you’re a vegetarian or a carnivore I have designed for flavour, with my own special technique to keep them low fat.

BIG GREEN OLIVES AND GRAPEFRUIT €3.75

Amazing green olives with segments of pink grapefruit and crushed ice made from cucumber juice and dill. Simply freshness in a bowl. Rich in iron, antioxidants, Vitamin C and E. Pure goodness for a healthy heart.

SALT COD BRANDAD €3.75

Salt cured cod crushed with onion potato parsley fried in rice bran oil with sweet onion, low fat crème fraiche and shaved ham. Fish promotes a healthy heart and boosts our immune system.Onions are packed with potassium and chromium. Great for promoting weight loss.

TEMPURA OF SALMON WITH CRUNCHY BROCCOLI, MINT AND CUCUMBER €8.50 / €5.95

Native fish wrapped in nori seaweed cooked in rice bran oil brought together with crunchy vegetables and yoghurt. High in protein and low in calories. Rice bran oil is one of the healthiest oils in the world. Seaweed is packed with essential minerals and nutrients…. it will give you a natural energy boost.

OUR CHICKEN WINGS €9.95 / €5.50

The city’s favourite, the oul chicken wing. Here I’ve done ‘em in some sticky soya and crushed roasted sesame seeds with fresh grated lime zest, garlic chips, red sprouts and coriander. I can’t say the wings are low fat, so I have tried to lighten the load with a superfood, but I can say they are freerange.

DUCK ‘N’ BEEF SANDWICHES €5.50

No bread here, just salt cured beef and citrus scented duck sandwiched with herb goats cheese and my own mango chutney. A low carb and high protein dish. Goats cheese is excellent for those who are lactose intolerant.

SWEET CHILLI PEPPERS €3.50

Sweet baby skinless chilli peppers stuffed with tartare of tuna, avocado and scented with the freshest soft herbs. Chillies are great for burning off fat, and if you like your protein lean you will love these little omega 3 bites.

BREADS ‘N’ DIPS €6.50 (serves two) / €3.25 (serves one)

Rustic selection of organic, sour and crunchy breads with my very own cumin scented hummus and baba ganoush bound with hazelnut oil. I hope you like this marriage, butter it if you want to. All of our bread has been organically certified.

CUBES OF MELON POACHED IN PICKLED GINGER SYRUP WITH TORN BASIL, SLICED RADISH AND CUCUMBER €4.95

Freshness stacked together and sprinkled with a little sesame powder. Melon is full of nutrients. A special compound in cantaloupe relieves the nerves and calms the nerves. Help for insomniacs

CRUNCHY SALAD HEARTS €7.25

The crispy core of Various heads of salad filled with tzatziki, courgette and marjoram compote, aubergine caviar and my own range of Rustic Stone chutneys. A powerhouse of nutrients packed with fibre, vitamins and minerals. Majoram helps you sleep better at night!

BEETROOT BROTH INFUSED WITH ORANGE AND DILL €5.50

Flavour release on this is better suited when cold, served with chopped broad beans and grated beetroot bound in my own orange relish. It’s high in iron, potassium and folic acid making it the perfect dish if you’re pregnant, or even if you’re just thinking about it!

CRAB MAYONNAISE ON TOAST WITH TORN HERBS AND WHEATGRASS €8.95

Great crab softened in a low fat mayonnaise smeared on toast, freshened with ripped fresh herbs and brushed with a superfood. Wheatgrass is a powerful superfood and brilliant for detoxing your body.

ASIAN QUAIL GRILLED ON A ST ICK WITH RADISH, MANGO AND CORIANDER €8.95

Spicy soya marinated quails. I grill them to keep them low fat and cut the spice with some sweetness.

ICED CUCUMBER SOUP WITH FROZEN AVOCADO €6.00

They say the real goodness is just under the skin, so I’ve used the skin to make a soup. If this isn’t real cold it isn’t good, so I’ve kept it that way with some good fats sorbet. Refreshingly low in calories. Ever hear the old saying ‘cool as a cucumber’? It comes from the fact that cucumbers naturally calm us down and help relieve stress. Packed with fibre.

CARROT BROTH INFUSED WITH STAR ANISE AND TARRAGON €5.50

I love the lightness of this simply served with chopped peas some grated carrot bound with mint, chervil and olive oil. Star Anise stimulates the digestive system, making it great for breaking down food. Tarragon is considered the King of Herbs.

BORLOTTI BEAN MINESTRONE SOUP WITH CHORIZO €10.95 / €6.95

Packed with the most nutritious chunky vegetables I could find, then finished with basil, parmesan and good olive oil. Has a hearty protein base and is high in fibre… a well balanced dish. Reduces the appetite and keeps you fuller for longer. A perfect dish for those on a low glycemic index diet. You can have this as a main course as well.

CHILLED MARINATED PRAWN WITH AVOCADO AND CUCUMBER €14.95 / €8.95

Slices of fresh prawns marinated in orange with cucumber, green grapes, avocado, ginger and soya toffee.

PORK PAPPARDELLE €15.95 / €10.50

Fried pork mince with onion, rosemary, bound with pumpkin, honey and sage. The joy of pork belly is in the flavor of its fat. This is for those who don’t care about calories.

PENNE PESTO €14.95 / €10.50

Good old fashioned chunky basil pesto with marinated tomatoes and roughly chopped great black olives with pine nuts and parmesan.

TRUFFLE TAGLIATELLE €17.95 / €12.00

A little bit of indulgence, simply bound in truffle dressing, low fat yoghurt and just a dollop of crème fraiche and a hint of nutmeg.

BABY MACARONI €16.50 / €10.95

Cooked in garlic cream with flaked chicken wing meat, parma ham and parsley bread crumbs and little grape mustard on crutes. A good meaty pasta full protein and flavour.

COURGETTE LINGUINI €16.95 / €9.95

Courgette poached with thyme and garlic then roasted filled with tomato and basil and linguini rolled in chives, capers, yogurt, with baby marinated tomato more torn basil and parmesan. Courgettes are great for weight loss and are an excellent source of fibre.

BOISTEROUS BEETROOT €11.95 / €8.50

Shaved fennel, baby gems, floppy lettuce, avocado, radicchio, chicory with pink grapefruit, pink radish, dill, beetroot and caramel pine nut dressed in its own beetroot juice split with olive oil. A super all round liver cleanse.

LUSCIOUS LIME €9.25 / €6.50

Floppy lettuce, baby gem leaves, watercress, torn iceberg, cucumber, pickled ginger, shaved mouli, slices of mango, coriander and watermelon dressed in lime roasted coconut, dill seed and lime. A refreshing salad packed nutritious fibre.

MIGHTY MUSTARD €14.95 / €10.25

Wild rocket, sliced prosciutto ham, shaved crisp slices of pear with toasted hazelnuts, parmesan and wild herbs dressed in my light mustard dressing. Mustard is extremely high in anti-oxidants.

POSH PESTO €10.95 / €7.25

Watercress, baby spinach, baby gem leaves, iceberg, cherry tomatoes, black olives, coriander, basil and pickled saffron shallots bound in pine nut herb pesto.

OUTRAGEOUS ORANGE €9.25 / €7.25

Wild rocket, shaved fennel, baby spinach, orange segments, pickled carrot, cucumber sheets and caramel pecans bound in a roasted coriander seed and orange dressing and fresh coriander leaves. Its high vitamin C content reduces tiredness and fatigue.

SUPERFOOD SALAD €17.95 / €11.85

Smoked haddock poached in soya milk with rocket, shaved fennel, watercress, wild leaves, broccoli, avocado, quinoa, cucumber, peas, broad beans and alfalfa sprouts. Simply bound in a little olive oil with a squeeze of lemon. The most powerful nutrient dense salad – no bad fats!

THE HAMBURGER €17.50

Very special mince ground from a recipe of difference cuts, chargrilled, served with herb mayonnaise and my own tomato and lemon chutney, crispy onions and Irish smoked cheddar in a brioche bun. Served with polenta chips.

THE GLAMBURGERS €17.50 / €8.75

For those of you who take smaller bites, I have put all of the above in two buns of sesame seeds and smoked paprika alongside parmesan and black pepper. Served with polenta chips.

SEA BREAM BAKED IN SALT FOR TWO €44.95

Sea bream with its belly stuffed with chopped corriander and lemon grass wrapped in banana leaf and baked in Course Sea salt Served with poached and roasted fennel and warm lettuce broad beans with a citrus and herb bulgar wheat. This high protein dish is designed to be healthy, fresh, full of clean flavors all extremely good for you.

THE BIG RUSTIC LAMB BURGER WITH PICKLED RED PEPPER AND CRISPY LAMB FILLET €18.50

Irish lamb mince with pickled red pepper, beef tomato, coriander leaves, floppy lettuce tzatziki and shaved parmesan. Pesto chips and smoked paprika mayonaise.

RUSTIC CHICKEN SALAD €9.25 / €16.95

Poached Free Range Chicken slices with Pickled Mushrooms, blanched asparagus long stem baby artichokes with broccoli slices bulgar wheat watercress tarragon parsley wild rocket and little truffle oil.

FISH IN A BAG €23

Mackerel fillets baked in a bag with carrots, shallots, saffron, fennel, quinoa cooked in carrot juice, coriander and dill. Nothing but pure goodness here, full of fragrance and freshness. An excellent brain and memory booster!

Top of the superfood list, I’ve suspended the strawberries in their own jelly, split with layers of vanilla crème fraiche and covered all in a light lime mousse.
