I’m a big fan of the Brownberry® Bread family of breads. I started using it regularly last August when I was trying to eat a more plant based diet. The bread comes in a ton of varieties and all are fresh, soft and very tasty. They’re healthy too!

All of Brownberry® Whole Grain Sliced Breads and Brownberry® Sandwich Thins® Rolls contain/are:

I use one form of Brownberry® Bread or another when making my sandwiches. The Brownberry® Bread Sandwich Thins are one of my favorites for burgers! I’m not adhering to a plant-based only diet but I am still trying to eat healthier than I used to. Better for me bread is one way of doing that. So I use Brownberry® Bread for sandwiches, toast, burgers, etc.

I’ve also been trying to come up with a better version of sub sandwiches. We have “sub night” a couple times a year for family movie night. Clay and the kids (and I) tend to load up a giant sub roll with lunch meat, cheese, pickles, and all the goodies you’d typically find in a good submarine sandwich. I wanted to take that, though, and make it a little better for me. And the kids. And Clay. You see, Clay does NOT, typically, like any form of whole grain or multi grain bread. It’s always been a struggle to get him to eat anything other than plain, white bread. But he eats this. And he likes it! In fact, he loves it.



I started with Arnold® Multi-Grain Pocket Thins. They are already split and ready to fill and hold everything you’d need for a sandwich. I used sliced, deli turkey (Clay ate ham) and then added fresh, sliced tomatoes, avocado, shredded romaine, cheese, pickles and a drizzle of our favorite Italian Dressing. I added a little salt and pepper and you can also add a little Italian Seasoning for added flavor. I left that off mine this time.



My sandwich was incredible. The bread was so good and added some texture and taste to my sandwich. The kids and Clay all devoured their flat bread subs. There was not a single pita bread pocket left! And… listen to this… Clay liked them so much that he bought more to make homemade Philly Cheese Steaks. He was that impressed with the flavor and softness of the Arnold® Multi-Grain Pocket Thins! When he suggested it, I almost feel off my chair because this guy never eats anything whole grain and yet, he suggested it. So that’s a big win in the Martin household. The steak sandwiches were out of this world too. Delish!

While I was shopping for the Arnold® Multi-Grain Pocket Thins I found another bread I just had to try. It is Arnold® Healthful Flax & Sunflower. It has all these big flax seeds and sunflower seeds on the top and then tons of grainy texture throughout. It looked so good. I couldn’t wait to use it with my homemade Blueberry Jam. You may remember me mentioning that last year on toast with another Brownberry® bread. I could just see it as a peanut butter and jelly sandwich so I bought some to try.

OH. MY. GOODNESS! It is so yummy! The seeds give it so much texture and crunch. It’s kind of like eating crunchy peanut butter only even better. And my jam has finely ground chia seeds in it so this isn’t your typical peanut butter and jelly sandwich. It’s healthy and delicious.

Here’s my recipe for Homemade Blueberry Jam if you’d like to try it. A jar lasts a week in the fridge.

Homemade Blueberry Chia Jam

Ingredients

3 C Blueberries (fresh, not frozen)

3 TBSP Maple Syrup

2 TBSP Chia Seeds (finely ground - I use a coffee grinder)

½ tsp Vanilla Extract

Instructions

Bring blueberries and maple syrup to a boil, stirring frequently.

Once boiling, reduce heat and simmer for about 5 minutes.

Gently mash blueberries while simmering. I like to use a wooden spoon.

After simmering for 5 minutes, stir in ground chia seeds, mixing thoroughly.

Continue cooking until thickened to your desired jam consistency. Approx 10 - 15 minutes.

Remove from heat and stir in vanilla.

Allow to cool 15 minutes and store in the refrigerator in a Mason or old jelly jar.

Will keep about a week.
