Savory Ham & Cheese Waffles

Serves 4

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon sugar
1 teaspoon salt
1 1/2 cups milk
1 large egg
1/2 stick unsalted butter, melted and cooled slightly
1 cup chopped honey ham
1 cup shredded Cabot White Oak Cheddar Cheese

Heat the waffle iron according to manufacturers directions.

In a large bowl, whisk together the flour, baking powder, sugar and salt. In a small bowl, whisk together the milk, egg and butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the ham and cheese.

Spray the waffle iron with nonstick cooking spray. Pour a half cup of batter onto the iron and spread to the edges. Cook until the waffles are golden, about 6-8 minutes, depending on your waffle iron. Repeat with the remaining batter, spraying the iron with cooking spray as needed, until all the waffles have been made. Keep the waffles warm in a 175 degree oven while you cook the eggs.

Heat a large skillet over medium heat. Crack the eggs in the pan, one at a time, and sprinkle each with salt and pepper. Cook until the edges are done and the center is just set. Turn the heat down to low and cover the pan with a lid. Cook another 2-3 minutes until the egg is cooked but the yolk is still runny. Divide the waffles equally onto four plates and top each one with an egg. Serve immediately.
