When it comes to dinner, quick and customizable is always a plus.  Add something everyone likes, such as pizza, and it’s sure to be a hit with not just the kids but the one preparing it as well!  At our house, everyone likes pizza, and the kids request it several times a week.  Of course, we don’t get it that often, but to appease their pizza cravings, we’ve come up with a few other ways to serve it without having to order in.

One favorite is what we call ‘Pizza Roll’.  Now, I know you’re probably thinking of those little bite size ones, but at our house, they’re much larger- imagine a pizza jelly roll.  The ingredients are simple and include whatever you like on pizza and pizza dough.  I like to use those canned ones that they have in the stores by the thwap biscuits, but if you want to make your own I’m sure that would work too.

While the oven is preheating according to the temperature on the dough, I chopped up the assorted veggies.  This time, we used olives, bell peppers, and onions.  I also grabbed some meats- I bought diced pepperoni and the new Jimmy Dean Crumbles.  They’re precooked, and available in Original, Turkey and Hot & Spicy.  I love them, they’re perfect for stuff like this, where you don’t have a lot of time to get dinner on the table- as well as having on hand for things like omelets or breakfast scrambles in the morning.

To make the pizza roll, just roll out the dough, and sprinkle shredded cheese on top.  Then add the meats and veggies.  Once all your toppings are on the pizza crust, roll it up like a jelly roll.  I like to sprinkle garlic salt or Italian seasonings on the top.   Then just pop it in the oven and bake for 25-30 minutes.

Once your pizza roll is done, let it cool slightly and then cut into 1-2 inch slices.  We serve it with a little bowl of pizza sauce that we’ve warmed up, for dipping.  Thanks to the convenience of Jimmy Dean Sausage Crumbles, the prep time for this dinner is only a few minutes.  I love yummy, homemade meals that the whole family approves of and are on the table quickly!
