I love creamy thick soups. I could it them everyday of the week. Here is one of my favorites.

Cream of Potato Soup

5 medium potatoes

1/2 cup chopped onion

1 1/2 cups chicken broth

1 tablespoon butter or margarine

1 tablespoon all purpose flour

1/4 teaspoon salt

dash of pepper

1/4 teaspoon dried dill (or basil)

1 cup of milk, half and half or light cream

Cook the potatoes peeled and cubed, and the onion in a large saucepan covered in boiling water. Drain well. Mash well with a potato masher. 

In a separate large saucepan melt butter. Stir in flour, salt and pepper. Add milk all at once and stir until slightly thickened and bubbling. Cook for another minute or so.

Now add the potato mixture and broth and heat well. Season with dill.
