I have always loved a good pot pie. Not only are they hearty and delicious but they are also pretty easy to make. I have experimented with a few recipes and I have added a few extra items to my Chicken Pot Pie recipe. This is a great meal to pull out of the oven after a day on the slopes!

Ingredients:

- ⅓ cup butter

- ½ onion, chopped

- ⅓ cup all-purpose flour

- ½ teaspoon salt

- ¼ teaspoon plus dash of pepper

- 1 ¾ cup chicken broth from boiled chicken

- ½ cup milk

- 2 cups of chicken (chopped or shredded)

- 1 small potato peeled and cubed (small cubes)

- 2 cups frozen veggies thawed (I just buy a bag of mixed veggies with corn, peas, green beans and carrots)

- 1 box Pillsbury pie crusts (2 crusts included)

Heat oven to 425*F.

Place chicken in water in a 2-quart pot with the dash of pepper. Boil chicken until cooked all the way through. Remove chicken from water and cube. Save 1 ¾ cups from chicken broth for pot pie.

Place one pie crust in the bottom of an ungreased 9inch pie plate. Press the crust into the plate in all the corners.

In a seperate 2-quart saucepan, melt butter over medium heat. Add onion; cook, stirring frequently until tender. Add peeled and cubed potato. Stir in flour, salt and the remainder of the pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thick. Stir in chicken and mixed vegetables. Remove from heat. Spoon into crust-lined pie plate.

Roll the second pie crust out on top. Pinch the top and bottom pie crusts together and trim as needed.

Bake 30-40 minutes or until the crust is goldeny delicious brown.

I hope you enjoy this recipe as much as I have! I adapted it from a Betty Crocker recipe and it’s been an amazing dinner when I am super hungry after a good day riding the slopes or hiking around the area. It serves 4 to 6 people, depending on if you have hungry teenage boys or if you have some great sides like a fruit salad or a side salad to compliment.  Think about prepping it ahead of time and then just popping it in the oven when you get back to the condo and dinner will be ready by the time everyone gets their gear off!
