KANAB — Maybe the location has something to do with it, because Peekaboo Canyon Wood Fired Kitchen is devoted to authenticity.

The Castle and the Battista families have called Kanab, Utah, home for more than 30 years. Their love affair with the town drove them to open Peekaboo Canyon Wood Fired Kitchen.

Founded by Mormon pioneers, Kanab has long been known as the gateway to three national parks; increasingly its lesser-known natural attractions like the spectacular Peekaboo Canyon are being discovered.

Peekaboo Canyon Wood Fired Kitchen is a welcoming eatery that is one of a new wave of restaurants transforming Kanab into a foodie hot spot.

“We recognize that other people are beginning to discover Kanab,” co-owner Julie Castle said. “A big part of opening Peekaboo is to promote all of the qualities of Kanab that we love; authentic, unique, and memorable!”

Co-owner Francis Battista said, “We are introducing vegetarian and vegan food to southern Utah that will please palettes without compromise.”

Peekaboo Canyon Wood Fired Kitchen is the only vegetarian/vegan restaurant between Las Vegas and Salt Lake City.  The atmosphere is casual dining in a unique setting featuring local walnut and solid sandstone tables, patio dining, and an Anasazi-inspired wood fired oven.

The restaurant will celebrate its Grand Opening weekend on Saturday, Oct. 15, and Sunday, Oct. 16, featuring new specials, live entertainment and a celebratory Grand Opening craft cocktail.

“Our restaurant is about the love of real, artisan food without all of the fluff and stuff around dishes these days – especially pizza.  Real, simple, highest quality, honest, artisan food,” Castle added. “Our desire is to provide a place for friends to gather, enjoy a memorable meal and discuss life over a drink without going broke.”

Battista explained, “At Peekaboo we offer the finest artisanal pizza from our wood-fired oven, along with a full menu of international and locally inspired dishes created by Chef Michael Cooper. Everything is made with the freshest, highest quality ingredients we can source.

“Our beverages include carefully selected unique wines, signature cocktails designed by our mixologist Casey Young and the largest selection of draft beers for 50 miles, including our own signature Peekaboo Lager designed by Zion Brewery.

“We aim to offer this experience at an affordable price, while sourcing our produce locally whenever possible to serve the highest quality food available.”

Peekaboo Canyon Wood Fired Kitchen is centrally located in the Flagstone Boutique Inn & Suites in Kanab, Utah, 233 W. Center Street. Open seven days a week, 7 a.m. to 2 p.m. for breakfast and lunch; 5 p.m. to 10 p.m. for dinner.
