You want something different for a healthy salad? Here is a savoury saucy summer salad! Great for BBQ’s … It really is Nom nom nom.

Ingredients:

1 cup Pearl Barley

1/2 capsicum, diced

1 punnet cherry tomatoes, quartered

6 shallots

1/2 cup currants

juice of 1 orange

100gm feta cheese, diced

1 bag of seed mix (sunflower, pepitasetc, pine nuts etc)

1/2 cup parsley, chopped

Dressing:

1/2 cup sunflower oil

4 tbsp soy sauce

2 tbsp lemon juice & lemon zest

2 cloves of crushed garlic

Overnight: soak barley in water & the currants in orange juice.

Boil barley for 20mins in salted water. When barley is cool combine all ingredients in large bowl, gently toss until all mixed through evenly.

To make your dressing, place all dressing ingredients in small bowl or jug & mix well. Pour over salad just prior to serving.

Recipe Hints and Tips:

Barley Salad is not suitable for freezing

You can substitute the currents for cranberries
