Do you like cordon bleu? I do. I previously, a few years ago, made a orzo for cordon bleu AND egg rolls! But I wanted to make it, baked. It wasn't difficult but I think next time I'll buy the thin cut chicken breast instead of slicing my own. I didn't get mine thin enough so it was difficult to roll.
I used:
3 large chicken breast, boneless and skinless, sliced into 3 slices each
9 oz black forest ham
12 oz thinly sliced baby swiss
butter
parsley
Lay out a slice of the breast, top with ham and cheese. Roll and pin with a toothpick. I then dipped it in melted butter and parsley. Pan seared the sides and placed it in a baking pan. Then baked for 20 minutes at 350 degrees.
I served it with bacon cheese baked potato and a salad.

I love going on vacation. One of my favorite things to do is a staycation. You know where I stay at home, to save money, and pretend to be a tourist in my own town. I shop for souvenirs, browse the cute little stores downtown, finding enticing gifts, nic nacs and books along the way. I'm confidant that I will always find something new as I live on the coast in a tourist town right across the ditches(or creek) from several larger towns that are an easy hour drive. But like all driving trips, even if only an hour, I bring along snacks and lots of water. Seeking out new places to eat, local artist and of course if you know me, I'm always taking lots of photos along the way.
If you haven't tried a staycation, I strongly suggest it.
Find a local at the gas station, ask an elderly person where to eat, ask a post man which streets are the loveliest and so on.
