So, I’m up at my mom’s for Thanksgiving, but she lives way North. Back in the city we have no shortage of Tofurky products (or if you’re not into them, Gardein’s holiday roast) and we’ve (my sister and I) had that for practically every Thanksgiving we’ve been vegan. Not having a Tofu Turkey felt odd, so I decided to make one the old fashioned way.

It was fun! Here’s the before photo. Two voluptuous, perfectly round tofu turkey boobs in a carrot bra. I’ve seen recipes before for homemade tofu turkeys before, but I literally just entered the kitchen with an idea and left with fully prepared tofu mountains in the oven. It’s also got mushrooms, chickpeas, and a ton of spices in it. I like the smooth, uniform texture of a real Tofurky though, as opposed to those kind of vegetably ones. And I’m sad I can’t just buy their BEAUTIFUL, DELICIOUS stuffing. I didn’t have any long grain rice on me, but I am making a rather ricey stuffing with some added ingredients to a box mix.

It’s gonna look a lot more brown after I cook and baste it. Though I love all the awesome vegan products we have today, sometimes it’s nice to do something like this. It reminds me of the vegans I’ve met who lived vegan through the 80′s and 90′s and how much work and activism they’ve done to change things for the future and make it easier to live a life without animal products.

So today, I’m thankful for all the activists who came before me, who have made the world a better place. And it reminds me to keep pushing forward, because the world’s gonna be different in another 20-30 years whether we like it or not, so we might as well make choices today that lead to positive changes tomorrow.

Don’t know how good it looks to everyone else, but it actually tasted fantastic! I’m glad I have leftovers :) Also made a banana-lemon bundt cake with cranberries for Thanksgiving (my mom did the frosting). It’s so sweet and addicting! They made cherry cheesecake for themselves meaning I’ve been left the whole cake for myself, which is both a blessing and a curse.
