A couple of weeks ago I shared a delicious recipe for Pulled Pork Nachos.  Pulled pork is an absolute Southern staple and one of my favorite foods!  I love ordering it from local barbecue places, and I also love making it at home!

The only problem with making it at home is that it takes several hours to cook, which means I always have to plan ahead and be prepared to spend a day or an evening watching over the meat as it cooks.  It’s definitely well worth the time and effort, but I don’t always have time to do this!  And when I’ve been busy working all day and it’s time to pick up Noah from school, I definitely don’t have the time to cook a whole pork roast in time for dinner….until now!  Enter Farm Rich® Smokehouse Pulled Pork BBQ!

This pulled pork is just as delicious as anything you can make at home or get from a bbq stand, and it cooks up in the microwave in minutes!  Today I’m going to show you how I paired this delicious pulled pork with some Birds Eye Steamfresh® Flavor Full Sour Cream and Onion Potatoes to make a delicious and easy weeknight meal!



I purchased Farm Rich® Smokehouse Pulled Pork BBQ and Birds Eye Steamfresh® Flavor Full Sour Cream and Onion Potatoes at Walmart.

This recipe for Pork Potato Casserole is inspired by one of my favorite bbq stand items: The Pork Stuffed Potato.  Basically it’s a loaded backed potato stuffed with the bbq meat of your choice!  It’s amazingly good!

And this Pork Potato Casserole is definitely a great spin off!  Not only is it delicious and flavorful, it is oh-so-easy to make; it’s a quick fix, and it features ingredients your whole family will love!

Pork Potato Casserole

Ingredients:

1 package Farm Rich® Smokehouse Dry Rub Smoked Pork

2 packages Steamfresh® Flavor Full – Sour Cream and Onion Potatoes

1-2 cup(s) shredded cheddar cheese

4 slices cheddar cheese

1/2 package bacon bits

Sour Cream or BBQ Sauce

Directions:

Heat Farm Rich® Smokehouse Dry Rub Smoked Pork (or other Farm Rich® meat product of your choice) in the microwave as directed. Remove from microwave and heat potatoes as directed.

Spoon meat into an 8x8 casserole dish. (At this time you can also stir the BBQ sauce that came in your package, but I left the sauce out.) Then mix in shredded cheddar cheese. Stir in fully cooked potatoes.

Top meat and potato mixture with 4 slices of cheddar cheese, and sprinkle with bacon bits.

Place casserole in the oven uncovered. Cook for about 15 minutes at 350 degrees or until cheese slices are nicely melted.

Serve on a plate or bowl as is or cover with a little sour cream or bbq sauce for an extra punch of flavor!
