Fresh tomatoes, basil and cashew cheese make up this twist on the traditional margherita pizza.



It’s a pizza party at #SundaySupper this week!  In celebration of  national pizza month we are sharing  our favorite pizza or pizza inspired recipes. I  don’t know of many people that don’t like pizza so I’m sure we are going to be in for a treat this week.  Marghareta pizza is one of my favorite types of pizza.  It’s  full of fresh flavors from the tomatoes, basil and  melt-y mozzarella cheese. I had a few sprigs of basil and tomatoes left from my garden which inspired me to make a marghareta pizza for this #SundaySupper.  But I decided to change it up  and use cashew cheese,  rather than fresh mozzarella cheese.



Cashew cheese is made by soaking cashews overnight and blending them with nutritional yeast, water, garlic, tamari sauce. It tastes very similar to Parmesan cheese, but it lacks a cheesy texture.  That is until recently when I found the secret — tapioca flour.  Add a little bit of  at the end of blending, and heat the mixture quickly for a pan of cheesy goodness.



If you aren’t feeling  the cashew cheese, you can always substitute fresh mozzarella cheese.   Serve with a side salad  and enjoy!

Ingredients

For the Cheese

1 cup cashews soaked overnight in water

1 cup water

2 cloves

¼ cup nutritional yeast

2 cloves garlic

1 tablespoon tamari sauce

2 tablespoons tapioca powder

For the Pizza

your favorite pizza crust - I used whole wheat

2 to 3 sliced tomatoes

½ cup basil leaves

2 cloves garlic

1 tablespoon olive oil

Instructions

pre-heat oven to 425

Make the cheese by adding all ingredients except the tapioca flour to a food processor and blend until smooth add the tapioca powder and quickly blend texture will be a little bith thinner than ricotta cheese

add mixture to a sauce pan over medium heat and cook stirring constantly until the "cheese" becomes thick about 5 minutes

turn heat off and set aside

roll out pizza crust

combine the olive oil and garlic and brush over rolled out pizza crust

place in the oven and bake for 8 to 10 minutes

while crust is baking slice the tomatoes

remove crust and place sliced tomatoes on crust along with the basil leaves

using a spoon place cheese in clumps on the crust

place in oven and bake for 5 to 8 minutes until heated through
