Football season is just around the corner, and that means it’s time to tailgate!  Why not finish up  what’s left of  summer  harvest with this spicy and hearty vegetable chili made in a slow cooker.  It’s the perfect dish for your next  tailgating or football party.



I have to be honest, I am not a big football fan.  I enjoy the parties and the food more than the game itself.   But I am married to a football fanatic and NY Giants fan, so football has been a huge part of my life.   When football season begins, you will find me in the kitchen cooking up some tasty foods to enjoy on game day. Just like this hearty vegetable chili which I  make in my favorite kitchen essential, the slow cooker.

I’ve said it many times,  the slow cooker is my friend.  Toss all of the ingredients in and turn it on.  In a few hours a wonderfully delicious bowl of chili is ready, and if you aren’t ready to eat, it can sit in the slow cooker until you are ready.



Serve this with a spoonful of Greek Yogurt and some guacamole or sliced avocado. Enjoy!

Serves: 6

Ingredients

1½ cups chopped zucchini

3 cups chopped portobello mushrooms

1 cup diced onion

2 cloves diced garlic

1 chopped yellow or red bell pepper

1 chopped green pepper

1 chopped jalapeno pepper

1½ cups chopped tomatoes

2 cups chopped tomatillos

3 tablespoons chili powder

2 teaspoons ground cumin

¼ cup water

1½ cups black beans

1½ cups kidney beans

1 cup cooked quinoa

Juice of one lime

½ cup chopped fresh cilantro

Instructions

place vegetables, seasonings and water into a slow cooker and cook on low for two hours

add the quinoa and beans and cook for one hour longer

Stir in the lime juice and cilantro and serve.

Notes

Tasty Options Add ¼ to ½ lb browned ground turkey or chicken for non vegetarian version. This recipe freezes well, make extra and freeze for later use
