Broccoli pesto potato bites are made with a chunky broccoli pesto, the perfect combination of broccoli and potatoes.
There’s something about potatoes and broccoli that makes me happy. When potatoes are involved, there’s usually broccoli on the side somewhere because I think they both taste so good together. My baked potatoes are often topped with chopped broccoli and sometimes I roast the two of them together. But when you add garlic and cheese to make these broccoli pesto potato bites, it’s a match made in heaven.
With award season just around the corner, this week the SundaySupper theme is about fancy appetizers. I don’t know about you, but I would much rather munch on appetizers at a party instead of dinner. It’s so much fun to have a little taste of this and a little taste of that. The only problem with appetizers is that some can be calorie bombs, so I decided to bring some vegetables to the party.
Even though potatoes aren’t considered fancy by themselves, when you stuff pesto into cute little potatoes, they suddenly becomes fancy. You can serve the bites as is, or dip them in Greek yogurt.

Ingredients
10 baby potatoes
1 tablespoon olive oil
FOR THE PESTO
1 cup of chopped broccoli steamed
2 cloves garlic
⅛ cup olive oil
¼ cup packed fresh basil
⅛ cup chopped walnuts
3 tablespoons Parmesan cheese
Instructions
Pre-heat Oven to 375
slice the potatoes in half and place in a bowl add the olive and mix well
place the potatoes on a parchment lined baking sheet and roast until they begin to soften - about 25 to 30 minutes
remove from oven and set aside until they are cool enough to handle
using a teaspoon gently scoop out the pulp of the potatoes
save the pulp for another use and arrange the potato skins back on the baking sheet
Make the Pesto
Add the steamed broccoli, garlic, oil, basil and nuts to a food processor and pulse until all ingredients are combined - the mixture will be a bit chunky
add the oil and 2 tablespoons of cheese - process until combined
stuff the mixture into each potato half and sprinkle with the remaining cheese
bake for 15 minutes until heated through
