WAHOO Friday…Alright I have got a lot of randomness going on in this post before we kick off the weekend, so I thought it was appropriate to link up with Amanda for “Thinking Out Loud”. I cannot get enough coconut…To me, the smell of coconut just screams summer! Did you know that I was only introduced to coconut butter a couple of weeks ago? How did that happen? A hearty spoonful of this butter seems to be happening daily. It is all about those healthy FATS and I will gladly consume coconut butter! I was very happy to have been sent a package from Essentially Coconut to do a review/giveaway. I wonder how long it will take me to go through these jars? Make sure to check back next week…Back on the mat…FINALLY! I think the last time I stepped onto my yoga mat was 2 months ago. That is a VERY long time for me…my body and mind have missed it! Since I am not dedicated as much time to running right now, I am making more time for yoga. I did a 60 minute class at BIG yesterday morning and wowzers! My hips were screaming during Warrior II and my back muscles were on fire the following day. I am a little rusty! I need to make time for yoga again, because it does a body good and I really do love the way I feel inside and out when I am practicing regularly.

I am a Salata Select Blogger…A couple of months ago a PR company reached out to me about working with Salata over the next year to promote the business; EAT lots of their salads; and host giveaways. This was kind of a no brainer and I am going to head over to one of their many locations tomorrow night after yoga!

Salata is the fastest-growing salad and salad wrap restaurant company. They are kickingoff summer with three new additions to its 50+ ingredient list – watermelon, mango and blueberry. So now through June 15, guests can sweeten up their custom salad or salad wrap at any of Salata’s 42 locations in Texas, California and Illinois.

Salata will highlight the new ingredients with special combinations developed by Director of Product Development David Laborde. These suggested salads will be posted in store and include:

A berry-balsamic salad that combines fresh spinach with blueberries, strawberries, cranberries, almonds, feta and grilled chicken, topped with Salata’s popular balsamic vinaigrette.

A mix of spicy and sweet, starting with Salata’s salad mix topped with mango, pineapple, red onion, green pepper, jalapeno, pumpkin seeds and grilled chicken, and then finished off with chipotle ranch dressing.

A twist on ever-popular Mediterranean flavors, with watermelon, cucumber, radish, feta, chickpeas and falafel served over a bed of kale and drizzled with lemon vinaigrette dressing.

“At Salata, we’re all about guests’ choice, while at the same time delivering nutritious ingredients and a great customer experience,” said Laborde. “We’re testing chef-inspired suggestions to help our valued guests add delicious new options to their daily routines.”

Salata restaurants offer completely customizable salads and salad wraps made with a variety of more than 50 fresh, healthy ingredients. Unlike its competitors, Salata’s salads and wraps are assembled and tossed by staff and then sold for a set price rather than by weight. Freshly prepared soups, fresh-baked breads and desserts are also available. All locations are gluten-free certified and, in late 2014, vegan proteins were added to the lineup.
