I think a rest day on Friday is probably a pretty wise decision, that is going to happen on a regular basis, because that 4:00 AM wake up call HURTS! And taking some time to nourish my muscles and not worry about training is just what I need at the end of any week. Most Fridays I am typically busy all morning and then done for the day around noon, which is just fabulous. Of course, when I thought I was going to be finished by noon, I was on the phone, on my feet, DREAMING BIG until 4:00 PM (so glad I didn’t workout!) But, all the hard work is paying off and slowly but surely it is happening! Lots of fun projects are in the works with Growing Naturals, PeerFit and Nantucket Yoga Festival. More details to come as this all starts to unfold. When I finally sat down and took a deep breath, this is how I honestly felt…Sigh…
Oh my precious Kala…It is a rough life darling!
It was a good week, even though the “snow day” and the colder weather threw everyone off a little bit! I finished strong; my clients made some big gains in their strength; and next week is filled with more growing, nourishing, helping and inspiring others to reach their health and fitness goals. Grateful for this lifestyle I lead, even though I can be a roller coaster.
So let us end this week with some of my favorite eats from the week…YUMMY FOOD!
You honestly can never go wrong with anything in a almost empty nut butter jar and this one was random, but DELICIOUS!
2 whole eggs + 1 T chia seeds + cinnamon, nutmeg, vanilla, and water (scrambled all together);
1/2 c raspberries + 1/2 c blackberries;
Almost, but not really empty SunButter Sun Flower Seed Spread Natural Crunch jar!
Crock Pot Chicken Enchilada Soup
This recipe is awesome and I only made 2 changes. I did not add cheese and I used 1 whole jalapeño with the seeds, because I LOVE spice! This made 5 servings for me, because I only used two smaller skinless chicken breasts. Perfect amount of meals for lunches and dinners! I topped mine with spinach, yellow tomatoes, cilantro, fresh lime, Wholly Guacamole, salsa, and of course Sriracha!
Goat Cheese Stuffed Boneless Pork Chop…served with a sweet potato, mushrooms, yellow tomatoes, cilantro, green onions, and Sriracha! This dinner was easy, healthy, all from Costco of course, and ready in less than 30 minutes. I love pork chops! I set the oven for 375 degrees, put the stuffed pork chop, mushrooms, and tomatoes on a pan, and into the over for 25-30 minutes. I heated the sweet potato in the microwave for 5 minutes and then dinner was served. DELICIOUS!

I am completely delirious and need to rest up for the weekend. Cycling, yoga, running, boot camp, and Super Bowl festivities is on the agenda. Bring it on weekend!
