These tasty cookies incorporates 7.2 Shake for a protein-packed healthy treat!

7.2 Shake Protein Cookies

Ingredients:

3 cups Almonds

1 1/2 cups Pumpkin seeds

1 1/2 cups Sunflower seeds

1 1/4 cups Soaked dates (soaked for 20 minutes)

1/3 cup Maca powder

1 cup 7.2 Shake

2 1/2 cups Water

2 tsp Vanilla extract

2 tsp Cinnamon

1 tsp Clove

1 tsp Sea salt

1/3 cup Lemon juice

1 cup Goji berries (roughly chopped)

2 cups Sesame seeds

Directions:

In a food processor, pulse almonds, pumpkin seeds and sunflower seeds into small pieces; set aside in a large bowl. In food processor, add soaked dates, maca powder, 7.2 Shake and water. Mix well. Then add vanilla extract, cinnamon, clove and salt. Blend until incorporated. Pour this mixture into the large bowl with the nut and seed mixture. Stir mixture with spoon to make “cookie dough.”

Next, pulse goji berries, sesame seeds, and lemon juice in food processor creating a chunky mixture. Add to “cookie dough” and mix with spoon. Form balls of dough and flatten into a large cookie shape. Place on cookie sheets or dehydrator sheets.

There are two ways to “bake” these cookies. One preference is to dehydrate at 115 degrees for 12-24 hours until dry and soft or longer for a crisper cookie. Dehydration maintains the nutrient density of the cookie. Another option is to bake at 325 degrees in the oven for 50 minutes; cookies will be soft.
