‘Tis the season for all things peppermint! I experimented with my favorite no bake cheesecake recipe and turned it into the yummiest peppermint cheesecake, still served in a mason jar. I’m a sucker for anything in mason jars, desserts included. One jar is enough for a couple people to share or you can always just store your leftovers in the fridge, right inside of the jar. Another reason to love jar desserts (sharing optional)! If you love cheesecake + peppermint + chocolate, you’ll love this recipe!
INGREDIENTS (yields 4 jars)
6 pint sized wide mouth mason jars
1 bag Oreos (crushed)
1/4 cup unsalted butter (softened)
8oz plain cream cheese
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy cream
2 – 3.5 oz peppermint bark bars (broken into pieces)
peppermint crunch sprinkles
DIRECTIONS
Step 1: Add the bag of Oreos into a blender to crush. Melt the butter and mix with the crushed Oreos.
Step 2: Divide the mixture into the 4 jars, pressing the crust to the bottom of the jar with a spoon.
Step 3: Use a mixer to beat together the cream cheese, sugar, vanilla and cream until smooth and fluffy. Fold in the broken pieces of peppermint bark.
Step 4: Divide the cream cheese mixture between the 6 jar and layer on top of the Oreo crust. Refrigerate for 3-4 hours.
Step 5: Sprinkle the peppermint crunch over the cheesecake and serve immediately.
